769px\" \/><\/figure>\n\n\n\n<p>Tout d&#8217;abord, je commence par placer les pruneaux et les amandes dans de l\u2019eau bouillante pour les ramollir. <\/p>\n\n\n\n<p>Cette m\u00e9thode facilite le retrait de la peau des amandes ( si vous avez des amandes \u00e9mond\u00e9es, vous pouvez sauter cette \u00e9tape) et permet d&#8217;utiliser les pruneaux sans n\u00e9cessiter une \u00e9tape pr\u00e9alable de cuisson \u00e0 l&#8217;eau bouillante.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Comment_je_prepare_la_marinade_de_la_viande\"><\/span>Comment je viande choisir? <span class=\"ez-toc-section-end\"><\/span><\/h4>\n\n\n\n<p>\u00c9tant donn\u00e9 que ce plat n\u00e9cessite une cuisson lente pour  u, il est habituellement cuisin\u00e9 avec de l&#8217;agneau, mais de nombreuses variantes utilisent \u00e9galement de la viande de b\u0153uf, comme je le fais aujourd&#8217;hui. Vous \u00eates libre de choisir la viande que vous pr\u00e9f\u00e9rez en fonction de vos go\u00fbts personnels. Pour cette occasion, j&#8217;ai d\u00e9cid\u00e9 d&#8217;opter pour du b\u0153uf afin de varier un peu.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Quelle_partie_de_boeuf_jai_choisi_pour_ce_tajine\"><\/span>Quelle partie de boeuf j&#8217;ai choisi pour ce tajine?<span class=\"ez-toc-section-end\"><\/span><\/h4>\n\n\n\n<p>Pour des plats mijot\u00e9s, je choisis des morceaux de viande adapt\u00e9s \u00e0 une cuisson longue et lente, c&#8217;est ce qui permet d&#8217;obtenir une viande fondante et tendre.<\/p>\n\n\n\n<p>Les parties du b\u0153uf les plus adapt\u00e9es pour les plats mijot\u00e9s sont g\u00e9n\u00e9ralement les morceaux riches en collag\u00e8ne et en gras. Voici quelques exemples de morceaux adapt\u00e9s :<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Macreuse : \u00c9galement appel\u00e9e g\u00eete \u00e0 la noix, elle est id\u00e9ale pour les mijot\u00e9s. Elle offre une texture fondante et beaucoup de saveur.<\/li>\n\n\n\n<li>Collier : Le collier contient du cartilage et du gras, ce qui le rend parfait pour une cuisson longue et lente. Il devient tendre et savoureux apr\u00e8s une cuisson ad\u00e9quate.<\/li>\n\n\n\n<li>Paleron : C&#8217;est une coupe g\u00e9n\u00e9ralement abordable et parfaite pour mijoter. Il est bien persill\u00e9 et devient tendre apr\u00e8s une cuisson prolong\u00e9e.<\/li>\n\n\n\n<li>Queue de b\u0153uf : Une coupe contenant beaucoup de collag\u00e8ne, id\u00e9ale pour les plats mijot\u00e9s. Dans un bol, fusionnez cette eau safran\u00e9e avec de l&#8217;huile d&#8217;olive et les \u00e9pices courantes du Tajine aux pruneaux : du gingembre, du curcuma , un peu de sel et de poivre , de la cannelle, et de la coriandre.<\/p>\n\n\n\n<p>Vous pouvez ajouter une touche de cardamome. Bien qu&#8217;elle soit moins courante dans la cuisine marocaine, en petite quantit\u00e9, elle apporte une l\u00e9g\u00e8re fra\u00eecheur citronn\u00e9e au Tajine.<\/p>\n\n\n\n<p>Vous pouvez pr\u00e9parer cette marinade \u00e0 l&#8217;avance et la viande peut y reposer au r\u00e9frig\u00e9rateur toute une nuit pour s&#8217;impr\u00e9gner de toutes ces saveurs avant la cuisson. Autrement laissez la viande mariner 30 minutes minimum.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Cuisson_de_la_viande_et_la_sauce_a_loignon_%E2%80%9CDeghmira%E2%80%9D\"><\/span>Cuisson de la viande et la sauce \u00e0 l&#8217;oignon &#8220;Deghmira&#8221;<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p>La &#8220;Daghmira&#8221;,  est une sauce traditionnelle utilis\u00e9e dans la cuisine marocaine, \u00e9labor\u00e9e \u00e0 partir d&#8217;oignons confits lentement, cuits jusqu&#8217;\u00e0 obtenir une texture fondante et caram\u00e9lis\u00e9e. On la retrouve dans les tajines et les plats mijot\u00e9s, apportant une saveur riche et complexe. Faites saisir la viande \u00e0 feu vif pendant environ 2 minutes de chaque c\u00f4t\u00e9. Ensuite, incorporez les oignons finement coup\u00e9s, le reste de l&#8217;eau safran\u00e9e et la marinade restante. <\/p>\n\n\n\n<p>Ajoutez un bouquet de persil et de coriandre, ainsi que le Smen (beurre rance). Dans certains plats de viande et de couscous, vous remarquerez l&#8217;ajout de bouquets d&#8217;herbes enti\u00e8res plut\u00f4t que hach\u00e9es. Contrairement aux tajines, comme celui au poulet citron, o\u00f9 les herbes sont souvent hach\u00e9es, l&#8217;id\u00e9e ici est d&#8217;avoir juste un l\u00e9ger go\u00fbt d&#8217;herbe sans que cela soit trop prononc\u00e9. Les herbes ajoutent subtilement leur saveur sans prendre le dessus sur les autres ingr\u00e9dients.<\/p>\n\n\n\n<p>Couvrez la po\u00eale et laissez cuire \u00e0 feu doux pendant 40 \u00e0 45 minutes. Les oignons vont lib\u00e9rer leur eau pendant la cuisson.<\/p>\n\n\n\n<p>La cl\u00e9 de ce tajine r\u00e9side dans la cuisson douce et lente. Cela permet aux saveurs de se m\u00e9langer tranquillement, ce qui d\u00e9veloppe un go\u00fbt d\u00e9licieux. Bien que pr\u00e9parer des kilos d&#8217;amandes ait \u00e9t\u00e9 fastidieux, j&#8217;aimais bien grignoter quelques-unes des amandes frites pendant cette t\u00e2che. <\/p>\n\n\n\n<p>Vous pouvez sauter cette \u00e9yape si vous avez des amandes \u00e9mond\u00e9es. Autrement, pelez les amandes une fois que leur peau a ramolli en pressant fermement chaque amande pour faciliter le retrait de la peau.
