Aujourd&#8217;hui, je vais te montrer comment pr\u00e9parer un vrai couscous marocain. Je tiens \u00e0 pr\u00e9ciser que chaque r\u00e9gion\/ famille a sa recette sp\u00e9ciale. Aujourd\u2019hui je te propose la mienne.<\/p>\n\n\n\n<p>Je vais essayer de r\u00e9sumer de fa\u00e7on concise pour ne pas te submerger, tout en te donnant les \u00e9tapes et les infos importantes.<\/p>\n\n\n\n<p>On va cuisiner un couscous 7 l\u00e9gumes avec une super Tfaya (oignons et raisins caram\u00e9lis\u00e9s) pour couronner le tout. Avant de commencer, je te conseille de tout pr\u00e9parer \u00e0 l&#8217;avance pour rendre les \u00e9tapes plus simples \u00e0 suivre.<br><br>Commen\u00e7ons par les pr\u00e9parations 100vw, 768px\" \/><\/figure>\n<\/figure>\n\n\n\n<p>Je vais utiliser plusieurs types de l\u00e9gumes pour mon couscous, les 7 l\u00e9gumes les plus couramment utilis\u00e9s dans un couscous sont la courgette, le potiron, le navet, la carotte, le chou, l\u2019oignon &amp; la tomate. Il existe diff\u00e9rentes vari\u00e9t\u00e9s de navets, et j&#8217;ai choisi trois types. Dans ma famille, on adore \u00e9galement les f\u00e8ves fra\u00eeches. Les deux sont utilis\u00e9s, mais les pois chiches restent bien plus populaires.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"La_Tfaya_la_preparation_sucree_a_base_de_confit_doignons_et_de_raisins\"><\/span><strong>La Tfaya, la pr\u00e9paration sucr\u00e9e \u00e0 base de confit d&#8217;oignons et de raisins<\/strong><span class=\"ez-toc-section-end\"><\/span><\/h3>\n\n\n\n<p>La Tfaya est une pr\u00e9paration sucr\u00e9e compos\u00e9e de confit d&#8217;oignons et de raisins est ajout\u00e9 en suppl\u00e9ment sur le couscous pour les becs sucr\u00e9s sal\u00e9s. C&#8217;est mon p\u00e9ch\u00e9 mignon, j&#8217;adore tellement \u00e7a!<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"les_epices_condiments_utilises_dans_un_couscous\"><\/span><strong> les \u00e9pices &amp; condiments utilis\u00e9s dans un couscous:<\/strong><span class=\"ez-toc-section-end\"><\/span><\/h3>\n\n\n\n<p>Contrairement \u00e0 ce que tu pourrais penser, le couscous ne compte que quatre \u00e9pices : Sel, Poivre, Curcuma et Gingembre. Mais le vrai go\u00fbt, c&#8217;est tout le reste des condiments : le Smen (ce beurre rance dans la cuisine marocaine), une bonne huile d&#8217;olive, et un bouquet de coriandre et de persil.<\/p>\n\n\n\n<p>Pour un bouillon vraiment savoureux, le secret r\u00e9side dans le choix et la cuisson de la viande. J&#8217;ai choisi de pr\u00e9parer un couscous \u00e0 l&#8217;agneau car c&#8217;est une viande grasse, tr\u00e8s savoureuse et qui a un impact sur le go\u00fbt du bouillon. Cette \u00e9tape est vraiment essentielle! Faire revenir la viande est la base de chaque plat ; cela permet de lib\u00e9rer toutes les saveurs. Dans une grande couscoussi\u00e8re, commence par disposer la viande, un gros oignon coup\u00e9, 3 grosses tomates ou l&#8217;\u00e9quivalent en petites tomates bien m\u00fbres rap\u00e9es (comme ce n&#8217;est pas la saison actuelle, je te conseille d&#8217;utiliser une bo\u00eete de conserve).<\/p>\n\n\n\n<p>Ajoute ensuite une cuill\u00e8re \u00e0 soupe bien bomb\u00e9e de curcuma et de gingembre, une cuill\u00e8re \u00e0 soupe de sel et une demi-cuill\u00e8re \u00e0 soupe de poivre. Int\u00e8gre \u00e9galement une cuill\u00e8re \u00e0 soupe de Smen (beurre rance) et environ 70 ml d&#8217;huile d&#8217;olive (\u00e9quivalent \u00e0 3\/4 d&#8217;un petit verre \u00e0 th\u00e9). Pense \u00e0 mettre les pois chiches que tu as tremp\u00e9s la veille maintenant. Si tu utilises des pois chiches en conserve, tu pourras les ajouter \u00e0 la fin.<\/p>\n\n\n\n<p>Ensuite, commence par ajouter le bouquet de persil et de coriandre ainsi que les l\u00e9gumes qui demandent un temps de cuisson plus long, comme le chou, les carottes et les navets. Si tes l\u00e9gumes sont petits, tu peux les ajouter plus tard. Ensuite, utilise tes mains pour rouler les graines jusqu&#8217;\u00e0 ce qu&#8217;ils soient bien s\u00e9par\u00e9s. Ajoute un peu d&#8217;eau, environ 100 ml pour 1 kg de graines de couscous, puis continue de rouler pendant quelques minutes.<\/p>\n\n\n\n<p>Transf\u00e8re le couscous dans la partie sup\u00e9rieure du couscoussier et place-le au-dessus du bouillon. Arrose-le avec environ un grand verre d&#8217;eau, soit environ 400 ml, puis m\u00e9lange \u00e0 l&#8217;aide d&#8217;une cuill\u00e8re en bois ou avec tes mains (attention, si c&#8217;est trop chaud) pour a\u00e9rer les graines. Ajoute les autres l\u00e9gumes restants : les courgettes, les pommes de terre, le piment ainsi que les f\u00e8ves fra\u00eeches. <\/p>\n\n\n\n<p>Tu peux ajouter le potiron maintenant si tu le souhaites. L&#8217;astuce est de laisser les oignons confire tr\u00e8s lentement sans ajouter d&#8217;eau.<\/p>\n\n\n\n<p>Commence par d\u00e9couper deux \u00e9normes oignons en lamelles tr\u00e8s fines. Ajoute 3 cuill\u00e8res \u00e0 soupe d&#8217;huile d&#8217;olive, une cuill\u00e8re \u00e0 caf\u00e9 de smen, 1 cuill\u00e8re \u00e0 caf\u00e9 de sel, curcuma, gingembre et cannelle. Tu remarqueras que j&#8217;ai utilis\u00e9 les m\u00eames \u00e9pices que pour le bouillon, en ajoutant \u00e9galement de la cannelle.<\/p>\n\n\n\n<p>Baisse le feu et laisse doucement confire les oignons \u00e0 couvert pendant la cuisson du couscous. N&#8217;ajoute pas d&#8217;eau, les oignons vont naturellement lib\u00e9rer leur eau. N&#8217;h\u00e9site pas \u00e0 remuer de temps en temps.<\/p>\n\n\n\n<p>Une fois les oignons bien r\u00e9duits et ultra fondants, ajoute les raisins secs, ainsi qu&#8217;une grosse cuill\u00e8re \u00e0 soupe de miel, et poursuis la cuisson pendant quelques minutes de plus. Environ 20 minutes avant de servir le couscous, pr\u00e9l\u00e8ve un peu de bouillon et mets-le dans une casserole. Ajoute le potiron avec un b\u00e2ton de cannelle et 1 cuill\u00e8re \u00e0 caf\u00e9 de cannelle en poudre, et laisse cuire pendant 15 \u00e0 20 minutes jusqu&#8217;\u00e0 ce que la chair soit fondante. Ajoute ensuite une cuill\u00e8re \u00e0 soupe de miel et poursuis la cuisson.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"La_presentation_du_Couscous_Marocain\"><\/span>La pr\u00e9sentation du Couscous Marocain<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p>Dispose le couscous en forme de d\u00f4me dans un grand plat creux. Creuse un puits au centre \u00e0 l&#8217;aide d&#8217;un bol et arrose abondamment tout le couscous avec environ 3 louches de bouillon.<\/p>\n\n\n\n<p>Place la viande au centre, dispose les l\u00e9gumes de mani\u00e8re \u00e9quilibr\u00e9e autour : une carotte, une courgette, un navet&#8230; Ajoute ensuite le potiron, les pois chiches et les f\u00e8ves, puis termine par placer la Tfaya par-dessus la viande pour couronner le tout. Arrose de nouveau avec du bouillon. Place le reste du bouillon dans un bol pour le service \u00e0 table.<\/p>\n\n\n\n<p>A consommer imm\u00e9diatement, bien chaud. Ajouter 1 c\u00e0s de Smen (beurre rance) et environ 70 ml d\u2019huile d\u2019olive (l&#39;\u00e9quivalent \u00e0 3\/4 d\u2019un petit verre \u00e0 th\u00e9). Utiliser les mains pour rouler les graines jusqu\u2019\u00e0 ce qu\u2019ils soient bien s\u00e9par\u00e9s. Ajouter 100 ml d&#39;eau ti\u00e8de puis continuer de rouler pendant quelques minutes.<\/span><\/div><\/li><li id=\"wprm-recipe-1449-step-2-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Transf\u00e9rer le couscous dans la partie sup\u00e9rieure du couscoussier et placer au-dessus du bouillon.
