Cette petite plante sauvage cool, pousse partout au Maroc. Les gens la ramassent dans les champs, les coins abandonn\u00e9s, bref, o\u00f9 ils peuvent la choper. T&#8217;en trouves aussi dans les souks. On hache les feuilles, on les fait vapeur, puis on les saute avec de l&#8217;huile d&#8217;olive, des \u00e9pices, des olives et des citrons confits. Le r\u00e9sultat, c&#8217;est une salade cuite d\u00e9licieuse, qui se mange chaude ou froide et qui se d\u00e9guste avec du bon pain. Au lieu de la jouer classique avec du pain, que dirais-tu de la mettre dans des feuilles de filo ou de brick en forme de serpentin &#8220;Mhencha&#8221; ? \u00c7a donne un genre de feuillet\u00e9 de mauve plusieurs fois dans un grand bol d&#8217;eau vinaigr\u00e9e puis \u00e9goutte-les . Hache finement les feuilles, ainsi que les herbes; l&#8217;\u00e9quivalent d&#8217;une cuill\u00e8re \u00e0 soupe de persil et d&#8217;une cuill\u00e8re \u00e0 soupe de coriandre. Moi, pour booster les saveurs, j&#8217;ai sorti le mortier de ma grand-m\u00e8re et j&#8217;ai \u00e9cras\u00e9 les herbes hach\u00e9es, l&#8217;ail, le sel avec une cuill\u00e8re \u00e0 soupe d&#8217;huile d&#8217;olive jusqu&#8217;\u00e0 obtenir une p\u00e2te. Int\u00e8gre \u00e9galement un citron confit hach\u00e9, en r\u00e9servant la peau d&#8217;une moiti\u00e9 pour la d\u00e9co ult\u00e9rieure, une petite cuill\u00e8re \u00e0 caf\u00e9 d&#8217;Harissa. Ensuite, saupoudre d&#8217;une cuill\u00e8re \u00e0 soupe de paprika, de cumin, de sel et de la moiti\u00e9 du poivre, suivi de la moiti\u00e9 d&#8217;un petit verre d&#8217;huile d&#8217;olive (environ 40 ml) puis un fond d&#8217;eau du m\u00eame verre. J&#8217;ai utilis\u00e9 quatre grosses bottes de feuilles de mauve, mais tu verras, tout \u00e7a va r\u00e9duire \u00e0 vue d&#8217;\u0153il. Elle a les m\u00eames mani\u00e8res que les \u00e9pinards, cette Bakkoula!<\/p>\n\n\n\n<p>Maintenant, referme la cocotte et laisse mijoter. Maintenant, avec un \u00e9crase-pur\u00e9e ou le dos d&#8217;une cuill\u00e8re, \u00e9crase un peu la bakkoula. Ensuite, ajoute 2 cuill\u00e8res \u00e0 soupe d&#8217;huile d&#8217;olive et le jus d&#8217;une demi-citron.
