Je me suis lanc\u00e9e dans une exp\u00e9rience sucr\u00e9e : une p\u00e2te bris\u00e9e sans gluten au cacao et au caf\u00e9, une cr\u00e8me diplomate parfum\u00e9e \u00e0 l&#8217;amlou, et un caramel de dattes agr\u00e9ment\u00e9 d&#8217;amandes concass\u00e9es.<\/p>\n\n\n\n<p>Si tu ne connais pas l\u2019Amlou, c&#8217;est une pr\u00e9paration ( p\u00e2te \u00e0 tartiner) typiquement originaire du sud du Maroc, sp\u00e9cialement des r\u00e9gions de l\u2019Atlas et de Souss. Elle est faite \u00e0 partir de trois ingr\u00e9dients de base : les amandes, l\u2019huile d\u2019argan et le miel. T&#8217;as la cr\u00e8me p\u00e2tissi\u00e8re qui donne ce c\u00f4t\u00e9 cr\u00e9meux, et puis la chantilly, avec de la cr\u00e8me et le mascarpone, qui apporte ce c\u00f4t\u00e9 l\u00e9ger et fluffy. Trempe la feuille de g\u00e9latine dans l&#8217;eau froide pendant une dizaine de minutes.<\/p>\n\n\n\n<p>2. Blanchis les jaunes d\u2019\u0153ufs et le sucre, puis ajoute la ma\u00efzena et fouette.<\/p>\n\n\n\n<p>3. Fais bouillir le lait et incorpore le \u00e0 la pr\u00e9paration.<\/p>\n\n\n\n<p>4. Transf\u00e8re le m\u00e9lange dans une casserole, fouette jusqu&#8217;\u00e0 \u00e9paississement, puis ajoute la g\u00e9latine \u00e9goutt\u00e9e et l&#8217;Amlou.<\/p>\n\n\n\n<p>5. M\u00e9lange le mascarpone avec 35g de cr\u00e8me liquide, fouette, puis ajoute le reste de la cr\u00e8me liquide.<\/p>\n\n\n\n<p>2. Monte bien la chantilly, ajoute le sucre glace et continue \u00e0 fouetter jusqu&#8217;\u00e0 consistance ferme. La chantilly est au top quand tu retournes le bol et qu&#8217;elle tient bien en place. C&#8217;est le signe qu&#8217;elle est bien mont\u00e9e et pr\u00eate \u00e0 \u00eatre utilis\u00e9e.<\/p>\n\n\n\n<p>3. Prends 8 petites dattes moelleuses d\u00e9noyot\u00e9es, recouvre-les d&#8217;eau chaude, et laisse-les reposer une quinzaine de minutes.<\/p>\n\n\n\n<p>2. Mixe les dates avec 2 cuill\u00e8res \u00e0 soupe de l&#8217;eau des dattes.<\/p>\n\n\n\n<p>3. Combine le mix sans gluten, le cacao, le sucre, et une pinc\u00e9e de sel dans un bol<\/p>\n\n\n\n<p>2.  Ajoute les cubes de beurre bien frais \u00e0 la pr\u00e9paration s\u00e8che.<\/p>\n\n\n\n<p>3.
