Dans les r\u00e9gions de Souss et Essaouira on c\u00e9l\u00e8bre le fameux &#8220;couscous amazigh&#8221;. Cette variante est pr\u00e9par\u00e9e avec du poisson et agr\u00e9ment\u00e9e de l&#8217;huile d&#8217;argan. <\/p>\n\n\n\n<p>Il est \u00e9galement particuli\u00e8rement appr\u00e9ci\u00e9 dans la r\u00e9gion de Doukkala-Abda surtout \u00e0 Safi et se d\u00e9cline avec divers accompagnements, que ce soit au poulet, \u00e0 la viande et viande s\u00e9ch\u00e9e ( Guedid) ou au poisson. <\/p>\n\n\n\n<p>En mati\u00e8re de gastronomie marocaine, je consid\u00e8re la cuisine de Safi comme particuli\u00e8rement diversifi\u00e9e et distinctive. Ma m\u00e8re m&#8217;a fait d\u00e9couvrir tant de bonnes choses, dont ce couscous sans gluten. <\/p>\n\n\n\n<div id=\"ez-toc-container\" class=\"ez-toc-v2_0_82_2 counter-hierarchy ez-toc-counter je t&#8217;ai partag\u00e9 pr\u00e9c\u00e9demment ( La recette est juste <mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-vivid-cyan-blue-color\"><strong>ici<\/strong><\/mark>, tu veux avoir plus de d\u00e9tails) je vais m\u00e9langer plein de l\u00e9gumes sympas. Tu sais, les 7 classiques : courgette, potiron, navet, carotte, chou, oignon, et tomate. En bonus, je jette toujours quelques petites pommes et patate douce cette fois et devine qui d\u00e9barque en surprise dans ce couscous de ma\u00efs sans gluten? L&#8217;aubergine! Toujours ajouter des aubergines pour Baddaz, je ne sais pas pourquoi. Respectons la tradition, m\u00eame quand c&#8217;est un peu myst\u00e9rieux, non ?<\/p>\n\n\n\n<p>C\u2019est bien connu d\u2019ajouter des l\u00e9gumineuses dans le Couscous. Dans ma famille, on adore \u00e9galement les f\u00e8ves fra\u00eeches. Faire revenir la viande est la base de chaque plat et surtout pour un bon bouillon; cela permet de lib\u00e9rer toutes les saveurs. Dans un grand couscoussier, commence par disposer la viande (j&#8217;ai utilis\u00e9 le collier de boeuf), un gros oignon coup\u00e9, 3 grosses tomates ou l\u2019\u00e9quivalent en petites tomates bien m\u00fbres rap\u00e9es (comme ce n\u2019est pas la saison actuelle, je te conseille d\u2019utiliser une bo\u00eete de conserve).<\/p>\n\n\n\n<p>Ajoute ensuite une cuill\u00e8re \u00e0 soupe bien bomb\u00e9e de curcuma et de gingembre, une cuill\u00e8re \u00e0 soupe de sel et une demi-cuill\u00e8re \u00e0 soupe de poivre. Int\u00e8gre \u00e9galement une cuill\u00e8re \u00e0 soupe de Smen (beurre rance) et environ 3 cuill\u00e8res \u00e0 soupe d\u2019huile d\u2019olive. Fais revenir la viande pendant environ 20 minutes avec ces ingr\u00e9dients ( 10 minutes si c\u2019est du poulet).<\/p>\n\n\n\n<p>Apr\u00e8s avoir saisi la viande et laiss\u00e9 mijoter quelques minutes pour bien m\u00e9langer tous les ingr\u00e9dients, ajoute un litre d\u2019eau bouillante. Pense \u00e0 mettre les pois chiches que tu as tremp\u00e9s la veille maintenant ainsi que les f\u00e8ves. Si tu utilises des pois chiches en conserve, tu pourras les ajouter \u00e0 la fin, puis laisser cuire encore 20 minutes.<\/p>\n\n\n\n<p>Ensuite, commence par ajouter le bouquet de persil et de coriandre ainsi que les l\u00e9gumes qui demandent un temps de cuisson plus long, comme le chou, les carottes et les navets. Si tes l\u00e9gumes sont petits, tu peux les ajouter plus tard. Verse la semoule de ma\u00efs fine dans un grand r\u00e9cipient, ajoute 4 cuill\u00e8res \u00e0 soupe d&#8217;huile d&#8217;olive et 1 cuill\u00e8re \u00e0 soupe de sel. Ajoute 400 ml d&#8217;eau, m\u00e9lange avec la paume de ta main, puis roule-la en faisant des cercles pour former de gros grains. Si des boules se forment, ne t&#8217;inqui\u00e8te pas, c&#8217;est tout \u00e0 fait normal. Tu peux les \u00e9craser avec les mains. Sinon, une option plus simple serait de passer la semoule au tamis. Tamise-la avec un tamis large.<\/p>\n\n\n\n<p>L&#8217;objectif final est d&#8217;obtenir une semoule qui puisse \u00eatre l\u00e9g\u00e8rement serr\u00e9e et qui conserve une certaine compacit\u00e9.<\/p>\n\n\n\n<p>N&#8217;h\u00e9site pas \u00e0 regarder la vid\u00e9o que j&#8217;ai partag\u00e9e sur Instagram, elle est juste en bas. Cela te donnera une bonne id\u00e9e de la m\u00e9thode.<\/p>\n\n\n\n<p>Transf\u00e8re le couscous de ma\u00efs dans la partie sup\u00e9rieure du couscoussier et place-le au-dessus du bouillon. Arrose-le avec environ un grand verre d\u2019eau, soit environ 400 ml, puis m\u00e9lange \u00e0 l\u2019aide d\u2019une cuill\u00e8re en bois ou avec tes mains (attention, si c\u2019est trop chaud) pour a\u00e9rer les graines. Puis remets le dans le couscoussier.<\/p>\n\n\n\n<p>Si \u00e0 ce stade tu trouves que les l\u00e9gumes ajout\u00e9s pr\u00e9c\u00e9demment ont d\u00e9j\u00e0 assez cuits je te conseille de les retirer. Ajoute les autres l\u00e9gumes restants : les courgettes, les aubergines, les pommes de terres et pommes de terres douces et le piment. <\/p>\n\n\n\n<p>Si tu le souhaites, tu peux incorporer le potiron. Pour ma part, j&#8217;ai pris la d\u00e9cision, 5 minutes avant la fin de leur cuisson, de poursuivre en les caram\u00e9lisant avec du miel. Pr\u00e9l\u00e8ve un peu de bouillon et place-le dans une casserole, ajoute-y du miel et laisse-le caram\u00e9liser l\u00e9g\u00e8rement.<\/p>\n\n\n\n<p>R\u00e9p\u00e8te la m\u00eame op\u00e9ration une fois de plus et laisse le couscous cuire pendant 30 minutes. Ajouter 1 c\u00e0s de Smen (beurre rance) et environ 4 c\u00e0s d\u2019huile d\u2019olive. Ajoute 4 cuill\u00e8res \u00e0 soupe d'huile d'olive et 1 cuill\u00e8re \u00e0 soupe de sel, puis utilise tes mains pour rouler les graines jusqu'\u00e0 ce qu'elles soient bien s\u00e9par\u00e9es.<\/div><\/li><li id=\"wprm-recipe-1675-step-2-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Ajoute 400 ml d'eau, m\u00e9lange avec la paume de ta main et roule-la en cercles pour former de gros grains. Si des boules se forment, ne t'inqui\u00e8te pas, c'est normal, tu peux les \u00e9craser avec les mains. Sinon, une option plus simple serait de tamiser la semoule avec un tamis large. L'objectif final est d'obtenir une semoule l\u00e9g\u00e8rement serr\u00e9e et compacte.<\/div><\/li><li id=\"wprm-recipe-1675-step-2-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Transf\u00e9rer le couscous dans la partie sup\u00e9rieure du couscoussier et placer au-dessus du bouillon.
