Si tu cherches une version sans gluten, tu es au bon endroit ! Appr\u00e9ci\u00e9e \u00e9galement pour ses bienfaits sur la lactation, elle est souvent partag\u00e9e lors des c\u00e9l\u00e9brations de bapt\u00eame. Pour moi, le Sellou \u00e9voque des moments chaleureux en famille pendant le Ramadan, o\u00f9 j&#8217;ai toujours appr\u00e9ci\u00e9 son go\u00fbt unique. Chaque famille a sa propre recette et chaque r\u00e9gion lui donne un nom diff\u00e9rent, ce qui en fait une tradition encore plus sp\u00e9ciale. Sinon, tu peux les torr\u00e9fier dans une po\u00eale \u00e9paisse \u00e0 feu moyen sans mati\u00e8re grasse, en remuant r\u00e9guli\u00e8rement jusqu&#8217;\u00e0 cuisson compl\u00e8te.<\/p>\n\n\n\n<p><strong>Les amandes:<\/strong> Elles jouent un r\u00f4le essentiel dans la pr\u00e9paration du Sellou. Habituellement, elles sont \u00e9mond\u00e9es et torr\u00e9fi\u00e9es avant d&#8217;\u00eatre r\u00e9duites en poudre. Pour les torr\u00e9fier, je les fais dorer au four pendant 20 \u00e0 30 minutes \u00e0 160\u00b0C. <\/p>\n\n\n\n<p>Personnellement, j&#8217;ai d\u00e9cid\u00e9 de ne pas les \u00e9monder car j&#8217;appr\u00e9cie leur saveur ainsi, mais tu es libre de le faire ou d&#8217;acheter des amandes d\u00e9j\u00e0 \u00e9mond\u00e9es. Plut\u00f4t que de les r\u00e9duire en poudre, j&#8217;aime les transformer en beurre* pour un go\u00fbt plus riche et pour utiliser moins de mati\u00e8re grasse.<\/p>\n\n\n\n<p>Je conserve une quantit\u00e9 d&#8217;amandes que je concasse grossi\u00e8rement pour obtenir une texture croquante.<br><br><em>(*) Pour faire un beurre d&#8217;amande, il suffit de mixer des amandes jusqu&#8217;\u00e0 obtenir une texture lisse et cr\u00e9meuse, en faisant des pauses pour racler les parois du mixeur si n\u00e9cessaire.<\/em><\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"877\" height=\"1024\" src=\"https:\/\/nadzsnacks.com\/wp-content\/uploads\/2024\/02\/IMG_7072-877x1024.jpg\" alt=\"\" class=\"wp-image-1913\" srcset=\"https:\/\/nadzsnacks.com\/wp-content\/uploads\/2024\/02\/IMG_7072-877x1024.jpg 877w, https:\/\/nadzsnacks.com\/wp-content\/uploads\/2024\/02\/IMG_7072-257x300.jpg 257w, https:\/\/nadzsnacks.com\/wp-content\/uploads\/2024\/02\/IMG_7072-768x896.jpg 768w, https:\/\/nadzsnacks.com\/wp-content\/uploads\/2024\/02\/IMG_7072-600x700.jpg 600w, https:\/\/nadzsnacks.com\/wp-content\/uploads\/2024\/02\/IMG_7072.jpg 1179w\" sizes=\"(max-width: 877px) 100vw, 877px\" \/><\/figure>\n\n\n\n<p><strong>Les graines de s\u00e9same:<\/strong>  Pour intensifier leur saveur, je les fais griller soit au four, soit \u00e0 la po\u00eale en remuant r\u00e9guli\u00e8rement. Cette \u00e9tape est rapide car elles cuisent plus rapidement que les amandes. Ensuite, je mixe les trois quarts des graines pour obtenir une p\u00e2te de s\u00e9same (tahini)*, qui enrichira la texture du Sellou. Je laisse le quart restant entier pour apporter une touche de croquant \u00e0 la pr\u00e9paration.<\/p>\n\n\n\n<p><em>(*) Pour faire une p\u00e2te de s\u00e9same, il suffit de mixer les graines de s\u00e9same jusqu&#8217;\u00e0 obtenir une texture lisse et cr\u00e9meuse, en faisant des pauses pour racler les parois du mixeur si n\u00e9cessaire.<\/em><\/p>\n\n\n\n<p><strong>La gomme arabique ou la gomme d&#8217;Acacia:<\/strong> Bien que facultative, elle est recommand\u00e9e pour prolonger la dur\u00e9e de conservation du Sellou, id\u00e9al pour les grandes quantit\u00e9s pr\u00e9par\u00e9es pendant le Ramadan. Moi je l&#8217;ai sous forme de poudre mais si tu en as sous forme de perles, utilise 3 perles que tu pileras avec une cuill\u00e8re ou r\u00e2peras jusqu&#8217;\u00e0 obtenir une poudre fine. Cette poudre sera ajout\u00e9e \u00e0 la pr\u00e9paration pour am\u00e9liorer sa texture et sa conservation.<\/p>\n\n\n\n<p><strong>Les \u00e9pices: <\/strong>Au Maroc, la famille de l&#8217;anis est largement utilis\u00e9e dans nos pr\u00e9parations culinaires. Sur le march\u00e9, on trouve plusieurs variations. Pour le Sellou, j&#8217;utilise personnellement, l<strong>&#8216;anis vert<\/strong>, le<strong> fenouil <\/strong>et le<strong> fenouil Boustani<\/strong>, qui a un go\u00fbt plus subtil. Si tu ne trouves pas cette vari\u00e9t\u00e9, tu peux t&#8217;en passer. Avant de les mixer, je les fais l\u00e9g\u00e8rement chauffer \u00e0 feu moyen pendant une \u00e0 deux minutes pour lib\u00e9rer leurs saveurs.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"978\" src=\"https:\/\/nadzsnacks.com\/wp-content\/uploads\/2024\/02\/IMG_7074-1024x978.jpg\" alt=\"\" class=\"wp-image-1910\" srcset=\"https:\/\/nadzsnacks.com\/wp-content\/uploads\/2024\/02\/IMG_7074-1024x978.jpg 1024w, https:\/\/nadzsnacks.com\/wp-content\/uploads\/2024\/02\/IMG_7074-300x287.jpg 300w, https:\/\/nadzsnacks.com\/wp-content\/uploads\/2024\/02\/IMG_7074-768x733.jpg 768w, https:\/\/nadzsnacks.com\/wp-content\/uploads\/2024\/02\/IMG_7074-600x573.jpg 600w, https:\/\/nadzsnacks.com\/wp-content\/uploads\/2024\/02\/IMG_7074.jpg 1179w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n\n\n\n<p>En plus de cela, j&#8217;ajoute un peu de cannelle pour parfaire la saveur.<\/p>\n\n\n\n<p><strong>Mati\u00e8res grasses<\/strong>: Le fait de mixer les amandes et le s\u00e9same en beurre permet de r\u00e9duire la quantit\u00e9 de mati\u00e8res grasses n\u00e9cessaires pour lier la p\u00e2te \u00e0 Sellou. Cependant, pour moi, <strong>l&#8217;huile d&#8217;olive<\/strong> est indispensable en termes de go\u00fbt. J&#8217;en ajoute donc un peu, et cette ann\u00e9e, j&#8217;ai d\u00e9cid\u00e9 d&#8217;ajouter un<strong> beurre noisette<\/strong> pour une touche de gourmandise suppl\u00e9mentaire.<\/p>\n\n\n\n<p><strong>Le miel:<\/strong> Traditionnellement, le Sellou est pr\u00e9par\u00e9 avec du sucre glace, mais dans ma famille, nous l&#8217;avons toujours fait avec du miel. Le miel est un sucrant naturel et sain, et \u00e0 mon go\u00fbt, il est plus savoureux. Il se marie parfaitement avec les autres ingr\u00e9dients de la recette du Sellou.<\/p>\n\n\n\n<p><strong>L&#8217;eau de fleur d&#8217;oranger:<\/strong> c&#8217;est pour moi comme l&#8217;\u00e9l\u00e9ment final qui compl\u00e8te la recette du Sellou, lui donnant une touche caract\u00e9ristique et parfum\u00e9e.
