Sa sauce, onctueuse gr\u00e2ce au miel et aux raisins, enveloppe d\u00e9licieusement la viande tendre, obtenue gr\u00e2ce \u00e0 une longue et douce cuisson de l&#8217;agneau.<\/p>\n\n\n\n<p>Aujourd&#8217;hui, je vais te pr\u00e9senter une version simplifi\u00e9e tout en pr\u00e9servant l&#8217;essence de la Mrouzia. Une recette pens\u00e9e pour une cuisine quotidienne, mettant en avant une viande plus rapide \u00e0 pr\u00e9parer : le poulet. Il est parfait pour r\u00e9aliser des brochettes, tout en \u00e9voquant les saveurs de la cuisine marocaine. D&#8217;abord introduite au Maroc depuis l&#8217;\u00c9gypte via l&#8217;Andalousie, sa plus ancienne recette document\u00e9e remonte au 13\u00e8me si\u00e8cle dans un livre de cuisine andalou anonyme.<\/p>\n\n\n\n<p>Initialement appel\u00e9e &#8220;Escab\u00e8che&#8221;, cette pr\u00e9paration \u00e9tait une forme de Sikbaj, cuisin\u00e9e au vinaigre et mettant en avant des ingr\u00e9dients comme les raisins secs et le poulet. Au fil du temps, des cerises noires et des amandes ont \u00e9t\u00e9 int\u00e9gr\u00e9es, enrichissant sa palette de saveurs, telles que d\u00e9crites dans un ancien livre \u00e9gyptien. Et oui, mon choix de poulet pour une revisite simple ne vient pas de nul part, je rigole c&#8217;est un pur hasard.<\/p>\n\n\n\n<p>Au 14\u00e8me si\u00e8cle, Ibn Razin a r\u00e9f\u00e9renc\u00e9 la mrouzia sous le nom d&#8217;El Mu&#8217;assal, \u0645\u0639\u0633\u0644, signifiant &#8220;miel\u00e9e&#8221;, soulignant la douceur du miel dans ce plat. Progressivement, la recette a \u00e9volu\u00e9, abandonnant le vinaigre au profit d&#8217;\u00e9pices et d&#8217;autres fruits secs sucr\u00e9s comme les dattes, les figues et les pruneaux, souvent accompagn\u00e9s de miel ou de sucre.<\/p>\n\n\n\n<p>Bien que le vinaigre ait disparu, l&#8217;\u00e9quilibre entre le sucr\u00e9 et l&#8217;acide demeure crucial dans le choix des fruits secs. Le Ras El Hanout est souvent au c\u0153ur de cette composition, bien qu&#8217;il existe une multitude de variantes qui peuvent rendre le choix difficile.<\/p>\n\n\n\n<p>Il est vrai que sur le march\u00e9, les m\u00e9langes de Ras El Hanout peuvent \u00eatre tr\u00e8s diff\u00e9rents les uns des autres, ce qui peut parfois compromettre le go\u00fbt recherch\u00e9. Pour simplifier les choses, voici une liste des <strong>\u00e9pices<\/strong> de base qui composent g\u00e9n\u00e9ralement le <strong>Ras El Hanout <\/strong>:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>17 g de poivre de Guin\u00e9e<\/li>\n\n\n\n<li>17 g de gingembre<\/li>\n\n\n\n<li>17 g de noix de muscade sahraouia (une vari\u00e9t\u00e9 particuli\u00e8re de noix de muscade)<\/li>\n\n\n\n<li>10 g de cannelle<\/li>\n\n\n\n<li>5 g de grains de paradis<\/li>\n\n\n\n<li>3 g de clous de girofle<\/li>\n\n\n\n<li>2 noix de muscade<\/li>\n<\/ul>\n\n\n\n<p>Trouver un m\u00e9lange qui se rapproche de ces proportions peut \u00eatre un bon compromis si tu ne souhaites pas pr\u00e9parer ton propre m\u00e9lange d&#8217;\u00e9pices. Cependant, tu peux obtenir le m\u00eame go\u00fbt en seulement 30 minutes avec du poulet.<\/p>\n\n\n\n<p>Des brochettes de poulet, marin\u00e9es avec les m\u00eames \u00e9pices \u00e9voqu\u00e9es pr\u00e9c\u00e9demment, et servies avec une d\u00e9licieuse sauce aux raisins caram\u00e9lis\u00e9s au miel, agr\u00e9ment\u00e9es d&#8217;amandes effil\u00e9es. Mets-y le safran et laisse infuser pendant quelques minutes.<\/li>\n\n\n\n<li>Une fois que le safran a bien infus\u00e9, ajoute le reste des \u00e9pices : Ras El Hanout, cannelle, curcuma, gingembre, poivre et sel.<\/li>\n\n\n\n<li>Incorpore le smen fondu et une gousse d&#8217;ail r\u00e2p\u00e9e \u00e0 la pr\u00e9paration.<\/li>\n\n\n\n<li>Ajoute les morceaux de poulet (tu peux utiliser des morceaux de cuisse ou de blanc de poulet selon ce que tu pr\u00e9f\u00e8res, mais adapte le temps de cuisson pour \u00e9viter que la viande ne devienne s\u00e8che).<\/li>\n<\/ol>\n\n\n\n<p>Cette marinade va impr\u00e9gner la viande de toutes ses saveurs avant la cuisson, pour un plat d\u00e9licieusement parfum\u00e9.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"La_sauce_aux_oignons_raisins_Miel\"><\/span>La sauce aux oignons, raisins &amp; Miel <span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p>Il n&#8217;y a traditionnellement pas d&#8217;oignon dans la Mrouzia, mais j&#8217;ai d\u00e9cid\u00e9 d&#8217;en ajouter dans cette recette quotidienne pour renforcer la saveur. Apr\u00e8s tout, qui peut r\u00e9sister \u00e0 l&#8217;oignon ? Cela peut rappeler un peu la Tfaya, mais le m\u00e9lange d&#8217;oignons, de raisins et de miel est tout simplement d\u00e9licieux. Si le morceau est assez long, enfonce-le deux fois sur la brochette pour qu'il ne pende pas.
