d\u00e9signe les \u0153ufs en arabe et &#8220;Khlii&#8221; est une viande s\u00e9ch\u00e9e conserv\u00e9e dans de la graisse. Assaisonne avec du sel, du poivre, du cumin et du paprika. Ajoute un filet d&#8217;huile d&#8217;olive, de la coriandre cisel\u00e9e et laisse cuire \u00e0 feu doux pendant 20 minutes.<\/p>\n\n\n\n<p>La sauce sera pr\u00eate quand elle aura r\u00e9duit et aura une couleur plus fonc\u00e9e. Pendant ce temps, prends la viande de khlii et coupe-la en petits morceaux avec des ciseaux. Laisse cuire jusqu&#8217;\u00e0 ce qu&#8217;ils deviennent croustillants, puis transf\u00e8re-les sur du papier absorbant pour les laisser \u00e9goutter.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Pate_a_brioche_sans_gluten-2\"><\/span><strong>P\u00e2te \u00e0 brioche sans gluten :<\/strong><span class=\"ez-toc-section-end\"><\/span><\/h3>\n\n\n\n<p>Pr\u00e9chauffe le four \u00e0 240\u00b0C\/220\u00b0C en mode ventil\u00e9, avec la pierre \u00e0 pizza ou la plaque de cuisson \u00e0 l&#8217;int\u00e9rieur.<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Dans un r\u00e9cipient, m\u00e9lange le psyllium avec de l&#8217;eau ti\u00e8de. Attends quelques secondes, un gel va se former.<\/li>\n\n\n\n<li>Dans un robot culinaire, m\u00e9lange les ingr\u00e9dients secs : farine de tapioca, farine de millet, farine de sorgho, levure instantan\u00e9e, levure chimique, gomme d&#8217;acacia et sel.<\/li>\n\n\n\n<li>Ajoute ensuite les ingr\u00e9dients liquides : le gel de psyllium, le lait chaud, le beurre fondu, l&#8217;\u0153uf et le miel.<\/li>\n\n\n\n<li>P\u00e9tris la p\u00e2te pendant environ 8 \u00e0 10 minutes jusqu&#8217;\u00e0 ce qu&#8217;elle soit lisse.<\/li>\n\n\n\n<li>La p\u00e2te finale sera l\u00e9g\u00e8rement collante au toucher, c&#8217;est normal. Travaille-la sur une surface l\u00e9g\u00e8rement farin\u00e9e. R\u00e9siste \u00e0 l&#8217;envie d&#8217;ajouter plus de farine, \u00e7a rendrait la brioche trop dense.<\/li>\n\n\n\n<li>Sur une surface l\u00e9g\u00e8rement farin\u00e9e, p\u00e9tris la p\u00e2te bri\u00e8vement et forme une boule. Laisse reposer la p\u00e2te pendant 1 heure ou jusqu&#8217;\u00e0 ce qu&#8217;elle double de volume.<\/li>\n\n\n\n<li>D\u00e9gaze la p\u00e2te, divise-la en 9 parts \u00e9gales et roule chaque morceau dans des graines de s\u00e9same. \u00c9tale un morceau de p\u00e2te sur le lit de s\u00e9same en formant une grande forme ovale d&#8217;environ 25cm x 15cm et 3mm d&#8217;\u00e9paisseur. Pince les extr\u00e9mit\u00e9s pour former une sorte de bateau et replie les bords pour cr\u00e9er un espace au milieu qui servira de garniture. Pique le milieu \u00e0 l&#8217;aide d&#8217;une fourchette pour \u00e9viter qu&#8217;il ne gonfle.<\/li>\n\n\n\n<li>Glisse les pides, 2 \u00e0 la fois, sur la pierre \u00e0 pizza ou la plaque de cuisson chaude (utilise une pelle \u00e0 pizza si tu en as une ou une autre plaque de cuisson). Fais cuire pendant 8 minutes jusqu&#8217;\u00e0 ce que la cro\u00fbte soit l\u00e9g\u00e8rement dor\u00e9e, puis retire-les pour ajouter la garniture : sauce tomate, Khlii &amp; \u0153uf.
