Il est con\u00e7u pour les occasions festives! Ce riz safran\u00e9 \u00e9clatant, parfum\u00e9 aux \u00e9pices et m\u00e9lang\u00e9 \u00e0 une multitude de fruits et de noix est un vrai r\u00e9gal pour les yeux \u2013 et pour les papilles !<\/p>\n\n\n\n<p>Il peut \u00eatre servi sur une cro\u00fbte dor\u00e9e de riz, appel\u00e9e &#8220;Tahdig&#8221;. C&#8217;est une mani\u00e8re embl\u00e9matique de pr\u00e9parer le riz iranien et constitue la caract\u00e9ristique distinctive des plats de riz iranien croustillant. Mais si tu souhaites go\u00fbter \u00e0 cette accompagnement de riz iranien croustillant et caram\u00e9lis\u00e9e, infus\u00e9e de tant de saveurs et de textures, tu seras combl\u00e9 ! C&#8217;est une combinaison parfaite de croustillant et de moelleux, m\u00eal\u00e9e \u00e0 une douceur beurr\u00e9e, sal\u00e9e et \u00e9pic\u00e9e. Pour ce faire, utilise toujours du safran moulu et jamais les filaments ( 1 c\u00e0c ici). La m\u00e9thode traditionnelle pour le moudre est d&#8217;utiliser un petit pilon et un mortier avec 1\/2 cuill\u00e8re \u00e0 caf\u00e9 de sel ou de sucre pour faciliter la mouture. <\/strong><\/mark><\/p>\n\n\n\n<p><mark style=\"background-color:rgba(0, 0, 0, 0);color:#399046\" class=\"has-inline-color\"><strong>Pour faire infuser le safran, je le d\u00e9pose sur quelques gla\u00e7ons (125g de gla\u00e7ons ici) et le laisse fondre \u00e0 temp\u00e9rature ambiante. Cette m\u00e9thode permet au safran de lib\u00e9rer sa couleur et son ar\u00f4me progressivement pendant que la glace fond. C&#8217;est une technique infaillible qui donne toujours le meilleur safran concentr\u00e9.<\/strong><\/mark><\/p>\n<\/blockquote>\n\n\n\n<h4 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Comment_faire_le_Tahdig_le_riz_iranien_croustillant\"><\/span>Comment faire le Tahdig, le riz iranien croustillant? <span class=\"ez-toc-section-end\"><\/span><\/h4>\n\n\n\n<p>1- Pr\u00e9pare le riz iranien ou basmati \u00e0 l&#8217;avance. Lave-le \u00e0 l&#8217;eau ti\u00e8de jusqu&#8217;\u00e0 ce qu&#8217;elle soit claire, puis fais-le tremper dans de l&#8217;eau ti\u00e8de sal\u00e9e ( 2 c\u00e0s de sel) pendant au moins 30 minutes. <\/p>\n\n\n\n<p>2- Cuis ton riz basmati jusqu&#8217;\u00e0 ce qu&#8217;il soit al dente ( environ 5 \u00e0 7 minutes maximum) puis rince-le \u00e0 l&#8217;eau froide et \u00e9goutte-le. <\/p>\n\n\n\n<p>2-Fais chauffer l&#8217;huile dans une po\u00eale anti-adh\u00e9sive, ajoute 1 \u00e0 2 c\u00e0s d&#8217;eau safran\u00e9. Lorsque l&#8217;huile est chaude, place d\u00e9licatement tout le riz dans la casserole \u00e0 l&#8217;aide d&#8217;une fourchette (ne tasse pas le riz), mets des noisettes de beurre entre chaque couche de riz.<\/p>\n\n\n\n<p>3- Ajoute quelques gousses de cardamomes \u00e9cras\u00e9es. Couvre la casserole avec un couvercle envelopp\u00e9 dans un torchon propre; cela \u00e9quilibre la vapeur pendant la cuisson et permet d&#8217;obtenir un riz iranien parfait et non collant. Pour enlever l&#8217;amertume des zestes d&#8217;orange, porte-les \u00e0 \u00e9bullition 2 \u00e0 3 fois, en commen\u00e7ant \u00e0 chaque fois avec de l&#8217;eau froide. <\/p>\n\n\n\n<p>3- Place une po\u00eale \u00e0 feu moyen-doux, verse un peu d&#8217;huile, ajoute les oignons coup\u00e9s en lamelles et fais-les cuire \u00e0 moiti\u00e9, puis ajoute les \u00e9pices : 1 c\u00e0c de cannelle, les graines d&#8217;une gousse de cardamome, 1 c\u00e0c de curcuma et 1c\u00e0s d&#8217;eau de safran pr\u00e9par\u00e9e. Remue et fais cuire les oignons jusqu&#8217;\u00e0 ce qu&#8217;ils soient dor\u00e9s et caram\u00e9lis\u00e9s, puis retire-les de la po\u00eale et mets-les de c\u00f4t\u00e9.<\/p>\n\n\n\n<p>4- Dans la m\u00eame po\u00eale, \u00e0 feu moyen, fais cuire la moiti\u00e9 des baies d&#8217;\u00e9pine-vinette ou cranberries, les raisins secs, les carottes coup\u00e9es en fines lamelles, les \u00e9corces d&#8217;oranges coup\u00e9es en fines lamelles,  pistaches &amp; amandes \u00e9mond\u00e9es. Ajoute 1 grosse c\u00e0s de miel, sel &amp; poivre, 1 c\u00e0c de cannelle &amp; de curcuma et laisser confire le tout une dizaine de minutes. Ajoute ensuite 2 c\u00e0s d&#8217;eau safran\u00e9e.<br><br>5- Eteins le feu et ajoute environ 100g de riz cuit, le reste de l&#8217;eau safran\u00e9e, et m\u00e9lange d\u00e9licatement le tout puis presse le jus d&#8217;une demie orange. <\/p>\n\n\n\n<p>6- Dispose le riz blanc sur un beau plat ovale ou rond de grande taille, garnis avec le m\u00e9lange de riz safran\u00e9. Les Iraniens le pr\u00e9sentent de mani\u00e8re ludique sous forme d&#8217;escargot.<\/p>\n\n\n\n<p>Il suffit de couper un filet de poulet en longueur et de le rouler sur lui-m\u00eame jusqu&#8217;\u00e0 obtenir une forme d&#8217;escargot, puis de le tenir avec des cure-dents. Assaisonne-le avec les m\u00eames \u00e9pices que le riz iranien, \u00e0 savoir : sel, poivre, curcuma et cannelle.
