La saucisse de Merguez juteuse et \u00e9pic\u00e9e, tout juste sortie du grill, est accompagn\u00e9e de l\u00e9gumes grill\u00e9s : poivrons, courgettes, aubergines et oignons caram\u00e9lis\u00e9s. Si tu n&#8217;en as jamais go\u00fbt\u00e9, mais que tu aimes le chorizo, tu vas adorer les merguez. Elles offrent une profondeur de saveur remarquable, rehauss\u00e9e par des \u00e9pices nord-africaines.<\/p>\n\n\n\n<p>En France, les sandwiches aux merguez sont incontournables lors des barbecues, apportant une touche raffin\u00e9e \u00e0 tout pique-nique. Si tu as cette possibilit\u00e9, chauffe un gril \u00e0 feu vif. Place les merguez directement sur la grille du gril, couvre et fais-les cuire jusqu&#8217;\u00e0 ce qu&#8217;elles soient bien dor\u00e9es et croustillantes, en les retournant fr\u00e9quemment. Pour des merguez de 10 cm, cela devrait prendre environ 5 \u00e0 7 minutes. Retire les merguez du gril et laisse-les reposer.<\/p>\n\n\n\n<p>Sinon, tu peux obtenir d&#8217;excellents r\u00e9sultats \u00e0 la maison aussi. La cuisson des merguez \u00e0 la po\u00eale permet de se r\u00e9galer m\u00eame quand le temps n&#8217;est pas au barbecue. Le tout accompagn\u00e9 d&#8217;une d\u00e9licieuse sauce au poivron grill\u00e9 rehauss\u00e9e d&#8217;harissa.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Legumes_grilles\"><\/span>L\u00e9gumes grill\u00e9s<span class=\"ez-toc-section-end\"><\/span><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Coupe l\u2019aubergine et la courgette en rondelles. Saupoudre-les de sel pour les faire d\u00e9gorger pendant environ 20 \u00e0 30 minutes, puis rince-les et essuie les avec du papier absorbant.<\/li>\n\n\n\n<li>Enrobe les rondelles d\u2019aubergine et de courgette de farine de riz ou de bl\u00e9. Secoue l&#8217;exc\u00e9dent de farine. Fais chauffer de l\u2019huile d\u2019olive dans une po\u00eale \u00e0 feu moyen.<\/li>\n\n\n\n<li>Fais frire les rondelles jusqu\u2019\u00e0 ce qu\u2019elles soient dor\u00e9es des deux c\u00f4t\u00e9s, environ 3 \u00e0 4 minutes par c\u00f4t\u00e9. Ajoute du poivre en fin de cuisson.<\/li>\n\n\n\n<li>Pr\u00e9chauffe le four \u00e0 220\u00b0C. Dispose les poivrons entiers sur une plaque de cuisson recouverte de papier sulfuris\u00e9. Fais griller les poivrons au four pendant environ 20 \u00e0 25 minutes, en les retournant \u00e0 mi-cuisson, jusqu\u2019\u00e0 ce que la peau soit noircie et cloqu\u00e9e. Retire les poivrons du four et place-les imm\u00e9diatement dans un sac en plastique ou dans un bol recouvert de film plastique. Laisse-les reposer pendant 10 \u00e0 15 minutes. La vapeur aidera \u00e0 d\u00e9tacher la peau. Une fois refroidis, p\u00e8le les poivrons en retirant la peau noire, puis enl\u00e8ve les p\u00e9pins et les membranes internes.<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Oignons_Caramelises\"><\/span>Oignons Caram\u00e9lis\u00e9s <span class=\"ez-toc-section-end\"><\/span><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Coupe l\u2019oignon en lamelles fines. Fais chauffer un peu d\u2019huile d\u2019olive dans une po\u00eale \u00e0 feu moyen-doux. Ajoute les lamelles d\u2019oignon et fais les cuire en remuant r\u00e9guli\u00e8rement jusqu\u2019\u00e0 ce qu\u2019elles deviennent dor\u00e9es et caram\u00e9lis\u00e9es, environ 15 \u00e0 20 minutes. Assaisonnement selon ton go\u00fbt.<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Sauce_aux_poivrons\"><\/span>Sauce aux poivrons<span class=\"ez-toc-section-end\"><\/span><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Dans un blender ou un robot culinaire, ajoutez les poivrons grill\u00e9s pr\u00e9alablement pr\u00e9par\u00e9s. Ajoute une cuill\u00e8re \u00e0 soupe d&#8217;harissa pour commencer, ajuste selon votre tol\u00e9rance au piquant. Verse une portion de cr\u00e8me ou de yaourt dans le m\u00e9lange. La quantit\u00e9 d\u00e9pend de la consistance d\u00e9sir\u00e9e et de tes pr\u00e9f\u00e9rences personnelles. Assaisonne avec du sel et du poivre selon ton go\u00fbt. Mixe tous les ingr\u00e9dients jusqu&#8217;\u00e0 obtenir une consistance lisse et homog\u00e8ne. Dispose les poivrons, les aubergines, les courgettes, les merguez, l\u2019oignon caram\u00e9lis\u00e9 et de la coriandre sur la ciabatta sans gluten.
