J&#8217;adore changer les marinades et exp\u00e9rimenter de nouvelles associations. Cette fois-ci, j&#8217;ai pr\u00e9par\u00e9 un d\u00e9licieux poulet r\u00f4ti juteux Harissa-Miel &amp; Citron confit, servi avec des pommes de terre r\u00f4ties parfaitement dor\u00e9es. Si possible, optez pour un poulet \u00e9lev\u00e9 en plein air ou biologique.<\/li>\n\n\n\n<li><strong>Pommes de terre<\/strong> : Parfaites pour r\u00f4tir avec le poulet. Coupez-les en cubes ou en quartiers pour une cuisson uniforme. Les pommes de terre Yukon gold ou rouges fonctionnent bien.<\/li>\n\n\n\n<li><strong>Ail<\/strong> : L&#8217;ail frais est toujours essentiel. Il apporte une saveur robuste et savoureuse \u00e0 la sauce. Vous pouvez le remplacer par de la p\u00e2te d&#8217;ail en cas de besoin, mais l&#8217;ail frais est fortement recommand\u00e9.<\/li>\n\n\n\n<li><strong>Sel<\/strong> : Rehausse la saveur de l&#8217;ail et aide \u00e0 le r\u00e9duire en p\u00e2te.<\/li>\n\n\n\n<li><strong>Huile d&#8217;olive<\/strong> : Pour la croustillance et une saveur plus riche.<\/li>\n\n\n\n<li><strong>Persil et coriandre frais<\/strong> : Ajoutent une touche herbac\u00e9e et \u00e9quilibrent la forte saveur de l&#8217;ail.<\/li>\n\n\n\n<li><strong>\u00c9pices <\/strong>: J&#8217;aime utiliser une combinaison de curcuma, paprika, gingembre, sel, poivre et thym pour ajouter de la profondeur et des notes savoureuses. Cette technique pr\u00e9sente plusieurs avantages :<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>Cuisson Uniforme et Rapide<\/strong> : La volaille s&#8217;aplatit, ce qui permet une cuisson plus homog\u00e8ne et rapide.<\/li>\n\n\n\n<li><strong>Peau Plus Croustillante<\/strong> : Plus de peau est expos\u00e9e \u00e0 la chaleur, ce qui la rend plus croustillante.<\/li>\n\n\n\n<li><strong>Meilleure Absorption des Saveurs<\/strong> : La marinade et les \u00e9pices p\u00e9n\u00e8trent mieux la viande.<\/li>\n\n\n\n<li><strong>Facilit\u00e9 de Service<\/strong> : Le poulet est plus facile \u00e0 d\u00e9couper et \u00e0 servir.<\/li>\n<\/ol>\n\n\n\n<p>En bref, cette technique assure une cuisson parfaite, une peau croustillante et une meilleure saveur.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Preparer_le_poulet_pour_la_Marinade\"><\/span>Pr\u00e9parer le poulet pour la Marinade<span class=\"ez-toc-section-end\"><\/span><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Assure-toi que le poulet est bien d\u00e9congel\u00e9 et \u00e0 temp\u00e9rature ambiante. Place le poulet, poitrine vers le bas, sur une planche \u00e0 d\u00e9couper stable.<\/li>\n\n\n\n<li>Utilise des ciseaux de cuisine robustes ou un couteau bien aiguis\u00e9.<\/li>\n\n\n\n<li>Coupe d&#8217;un c\u00f4t\u00e9 de la colonne vert\u00e9brale du poulet, en commen\u00e7ant par le bas jusqu&#8217;en haut.<\/li>\n\n\n\n<li>Retourne le poulet, poitrine vers le haut. Appuie fermement sur le sternum pour aplatir le poulet. Tu entendras peut-\u00eatre un craquement quand tu appuieras dessus.<\/li>\n\n\n\n<li>Une fois ouvert, appuie encore pour bien aplatir le poulet afin qu&#8217;il soit bien plat sur la planche.<\/li>\n\n\n\n<li>J&#8217;aime bien passer du sel et du citron sur tout le poulet pour retirer les plumes les plus r\u00e9sistantes, mais c&#8217;est optionnel.<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Preparer_la_Marinade_Harissa-Miel_Citron_confit\"><\/span>Pr\u00e9parer la Marinade Harissa-Miel &amp; Citron confit<span class=\"ez-toc-section-end\"><\/span><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Commence par hacher le citron confit et l&#8217;ail, puis m\u00e9lange-les avec le reste des ingr\u00e9dients : huile, harissa, miel, jus de citron, moutarde et \u00e9pices. <\/li>\n\n\n\n<li>Badigeonne le poulet avec cette marinade, puis coupe les pommes de terre et badigeonne-les aussi avec cette marinade. <\/li>\n\n\n\n<li>Ensuite, mets le tout dans un plat adapt\u00e9 pour le four.<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Cuisson_du_Poulet_Roti_en_Crapaudine\"><\/span>Cuisson du Poulet R\u00f4ti en Crapaudine<span class=\"ez-toc-section-end\"><\/span><\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Cuire le poulet de 45 \u00e0 55 minutes ou jusqu\u2019\u00e0 ce que\u00a0sa temp\u00e9rature interne atteigne 76 \u00b0C ou jusqu\u2019\u00e0 ce que le jus qui s\u2019\u00e9coule soit clair. Environ 15 minutes avant la fin de la cuisson, arroser le poulet avec son jus et ajouter si d\u00e9sir\u00e9 le liquide choisi.
