Mon poissonnier l&#8217;a pr\u00e9par\u00e9 avec soin et il est vraiment d\u00e9licieux.<\/p>\n\n\n\n<p>Pour les \u00e9pices, j&#8217;ai m\u00e9lang\u00e9 cumin, paprika, curcuma, sel, poivre et feuilles de laurier avec de l&#8217;huile d&#8217;olive. Si une moule est ouverte et ne se referme pas lorsqu&#8217;on la tapote l\u00e9g\u00e8rement, elle est probablement morte et doit \u00eatre jet\u00e9e.<\/li>\n\n\n\n<li>Si n\u00e9cessaire, gratte les moules pour enlever les algues ou autres impuret\u00e9s qui pourraient \u00eatre attach\u00e9es \u00e0 leur coquille.Utilise une brosse \u00e0 l\u00e9gumes ou un chiffon propre pour frotter doucement la coquille sous l&#8217;eau courante<\/li>\n\n\n\n<li>Certaines moules peuvent avoir des filaments appel\u00e9s &#8220;barbes&#8221; qui d\u00e9passent de leur coquille. Pour les enlever, tire doucement sur chaque barbe vers le bord de la coquille. Si n\u00e9cessaire, coupe les barbes avec des ciseaux propres.<\/li>\n\n\n\n<li>Rince les moules \u00e0 l&#8217;eau froide pour \u00e9liminer tout r\u00e9sidu de sable ou de salet\u00e9.<\/li>\n\n\n\n<li>Une fois nettoy\u00e9es, conserve les moules au r\u00e9frig\u00e9rateur dans un r\u00e9cipient perfor\u00e9 ou dans un bol recouvert d&#8217;un torchon humide. Couvre la casserole avec un couvercle.<\/li>\n\n\n\n<li>Laisse cuire pendant environ 5 \u00e0 7 minutes. R\u00e2pe les tomates pour obtenir un coulis. Hache la coriandre.<\/li>\n\n\n\n<li>Faire revenir l&#8217;oignon, les \u00e9pices et les carcasses de poisson est une \u00e9tape cruciale pour lib\u00e9rer toutes les saveurs n\u00e9cessaires \u00e0 un bon bouillon. Dans un grand couscoussier, chauffe un filet d&#8217;huile d&#8217;olive et ajoute les oignons coup\u00e9s, les \u00e9pices, les feuilles de laurier, la coriandre hach\u00e9e et les carcasses de poisson.<\/li>\n\n\n\n<li>Laisse mijoter pendant environ 20 minutes pour bien d\u00e9velopper les saveurs. Commence par badigeonner g\u00e9n\u00e9reusement d&#8217;huile d&#8217;argan.<\/li>\n\n\n\n<li>Verse 2 louches de bouillon au fond, puis dispose une premi\u00e8re couche de semoule de ma\u00efs. Ajoute un filet d&#8217;huile d&#8217;argan et encore 2 louches de bouillon. Fais des trous avec une cuill\u00e8re pour permettre au bouillon de p\u00e9n\u00e9trer. Ajoute ensuite la deuxi\u00e8me couche de semoule de ma\u00efs et remets 2 louches de bouillon, suivies d&#8217;un filet d&#8217;huile d&#8217;argan.<\/li>\n\n\n\n<li>Lisse bien la semoule avec une spatule pour obtenir des bords et une surface uniformes. Dispose les l\u00e9gumes et le poisson cuit par-dessus, et ajoute un dernier filet d&#8217;huile d&#8217;argan.
