Le ghee est similaire au beurre clarifi\u00e9, car toutes les mati\u00e8res solides du lait en sont retir\u00e9es, mais il est cuit un peu plus longtemps, ce qui permet aux solides du lait au fond de la casserole de brunir, donnant ainsi au ghee une saveur plus noisette. En d&#8217;autres termes, c&#8217;est une alternative d\u00e9licieuse et all\u00e9g\u00e9e en produits laitiers au beurre ! Mais voici ce que j&#8217;aime aussi \u00e0 son sujet :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Il a un point de fum\u00e9e \u00e9lev\u00e9 :<\/strong> Le beurre classique peut fumer et br\u00fbler sur la cuisini\u00e8re (en raison des mati\u00e8res solides du lait), mais le ghee, lui, ne br\u00fble pas ! Cela le rend parfait pour la cuisson \u00e0 la po\u00eale et la friture. Utilise donc ta marque pr\u00e9f\u00e9r\u00e9e de beurre non sal\u00e9. Ajoute environ 500 grammes dans une petite casserole et fais-le cuire \u00e0 feu doux. Une fois que le beurre est fondu et commence \u00e0 fr\u00e9mir, tu remarqueras que le ghee va se s\u00e9parer en trois couches.<\/li>\n\n\n\n<li><strong>Au four :<\/strong> Pr\u00e9chauffe le four \u00e0 120\u00b0C. Place le beurre dans un r\u00e9cipient allant au four et laisse-le cuire pendant environ 1h30. Tu verras que le ghee se s\u00e9parera en trois couches, de la m\u00eame mani\u00e8re qu\u2019\u00e0 la casserole.<\/li>\n<\/ul>\n\n\n\n<p><strong>\u00c9cume la surface : <\/strong>Tu vas remarquer de la mousse se forme \u00e0 la surface et que le beurre cr\u00e9pite un peu, ce qui est d\u00fb \u00e0 l&#8217;\u00e9vaporation de l&#8217;eau. Retire cette mousse \u00e0 l&#8217;aide d&#8217;une cuill\u00e8re ou passoire et laisse cuire le ghee jusqu&#8217;\u00e0 ce que la mousse se transforme en bulles claires et que la couche interm\u00e9diaire devienne translucide. \u00c0 ce stade, tu devrais aussi commencer \u00e0 voir les solides du lait s&#8217;accrocher au fond de la casserole ou du plat \u00e0 four.<\/p>\n\n\n\n<p><strong>Laisse refroidir et conserve-le :<\/strong> Apr\u00e8s 25 \u00e0 30 minutes de cuisson, ton ghee devrait \u00eatre pr\u00eat. \u00c9teins le feu et laisse-le refroidir pendant quelques minutes, puis filtre-le dans un r\u00e9cipient en verre pour le conserver. En refroidissant, le ghee deviendra opaque et prendra une teinte jaune clair. Tu peux le conserver \u00e0 temp\u00e9rature ambiante, dans un placard \u00e0 l&#8217;abri de la lumi\u00e8re directe, pendant quelques mois. Si tu pr\u00e9vois de le garder plus longtemps, il est pr\u00e9f\u00e9rable de le stocker au r\u00e9frig\u00e9rateur, o\u00f9 il se conservera environ un an.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Foires_aux_Questions\"><\/span>Foires aux Questions<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p><strong>Q : Que se passe-t-il si on fait cuire le ghee trop longtemps ?<\/strong><br>Si tu fais cuire le ghee trop longtemps, tu obtiendras du beurre noisette, qui est d\u00e9licieux ! Cela signifie simplement que les solides du lait au fond de la casserole se sont caram\u00e9lis\u00e9s, donnant au ghee une saveur de caramel ou de toffee. Le beurre noisette est excellent pour pr\u00e9parer des desserts comme des cookies au beurre noisette, du banana bread, ou m\u00eame des brownies.<\/p>\n\n\n\n<p><strong>Q : Le ghee est-il sans produits laitiers ?<\/strong><br>En quelque sorte. Je sais que ce n\u2019est pas une r\u00e9ponse d\u00e9finitive, mais cela d\u00e9pend de ton niveau de sensibilit\u00e9 et de la mani\u00e8re dont le ghee a \u00e9t\u00e9 pr\u00e9par\u00e9. Oui, les mati\u00e8res solides du lait sont retir\u00e9es, mais \u00e0 moins que le ghee ait \u00e9t\u00e9 test\u00e9 pour \u00eatre 100 % exempt de cas\u00e9ine, il serait imprudent de le qualifier de totalement sans produits laitiers. Il est possible que quelques prot\u00e9ines de lait microscopiques subsistent.<\/p>\n\n\n\n<p>Cela dit, la plupart des personnes sensibles aux produits laitiers (lactose et cas\u00e9ine) trouvent qu&#8217;elles n&#8217;ont pas de probl\u00e8me avec le ghee. Mais c\u2019est quelque chose que tu devras tester par toi-m\u00eame.
