Cette version, inspir\u00e9e des &#8220;Krachel&#8221; marocains, \u00e9voque les saveurs du Maroc avec de l&#8217;eau de fleur d&#8217;oranger, du s\u00e9same et des graines d&#8217;anis. Pour une touche sp\u00e9ciale, j&#8217;ai ajout\u00e9 un caramel de dattes, une id\u00e9e que j&#8217;ai vue chez Carolina Gelen, qui se marie \u00e0 merveille avec ces ar\u00f4mes. Visuellement spectaculaire, la babka aux dattes est parfaite pour toutes les occasions. D\u00e9pose la p\u00e2te sur la surface et fa\u00e7onne-la grossi\u00e8rement en un rectangle. \u00c0 l&#8217;aide d&#8217;un rouleau \u00e0 p\u00e2tisserie, \u00e9tale la p\u00e2te en un rectangle de 30 x 36 cm, d&#8217;environ 1 cm d&#8217;\u00e9paisseur.<\/li>\n\n\n\n<li>Utilise une spatule pour \u00e9taler uniform\u00e9ment le caramel de dattes sur toute la surface de la p\u00e2te.<\/li>\n\n\n\n<li>En commen\u00e7ant par le c\u00f4t\u00e9 le plus long, roule la p\u00e2te bien serr\u00e9e pour former un boudin.<\/li>\n\n\n\n<li>Si la p\u00e2te semble grasse et molle \u00e0 ce stade, place le boudin sur une assiette ou une plaque de cuisson recouverte de papier sulfuris\u00e9 et mets-le au r\u00e9frig\u00e9rateur pendant 10 \u00e0 15 minutes. Cela facilitera la manipulation.<\/li>\n\n\n\n<li>Graisse l\u00e9g\u00e8rement avec de l&#8217;huile et tapisse de papier sulfuris\u00e9 un moule \u00e0 cake de 20 x 10 cm. Un moule plus grand peut \u00e9galement convenir.<\/li>\n\n\n\n<li>Utilise un couteau bien aiguis\u00e9 ou un coupe-p\u00e2te pour couper le boudin en deux dans le sens de la longueur, formant ainsi deux bandes de p\u00e2te garnie et torsad\u00e9e.<\/li>\n\n\n\n<li>Torsade les deux bandes de p\u00e2te ensemble 2 ou 3 fois pour former un gros pain torsad\u00e9.<\/li>\n\n\n\n<li>Place la p\u00e2te dans le moule \u00e0 cake et couvre-la d&#8217;un film plastique. Laisse lever pendant 1 heure 30 \u00e0 2 heures, jusqu&#8217;\u00e0 ce qu&#8217;elle soit gonfl\u00e9e et visiblement plus grande, presque doubl\u00e9e de volume.<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Preparer_la_Dorure\"><\/span>Pr\u00e9parer la Dorure <span class=\"ez-toc-section-end\"><\/span><\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>Pr\u00e9parer la Dorure :<\/strong> Dans un petit bol, casse l&#8217;\u0153uf. Ajoute l&#8217;eau et fouette le tout jusqu&#8217;\u00e0 obtenir un m\u00e9lange homog\u00e8ne. \u00c0 l&#8217;aide d&#8217;un pinceau de cuisine ou de tes doigts, applique la dorure sur toute la surface de la babka.<\/li>\n\n\n\n<li><strong>Cuire la Babka :<\/strong> Fais cuire la babka jusqu&#8217;\u00e0 ce qu&#8217;elle soit dor\u00e9e et brillante sur le dessus, et que la temp\u00e9rature au centre atteigne 85\u00b0C \u00e0 88\u00b0C, soit environ 40 \u00e0 50 minutes. Surveille bien la cuisson, car la babka peut foncer rapidement sur le dessus. D\u00e8s que la couleur commence \u00e0 devenir plus fonc\u00e9e, apr\u00e8s 15 \u00e0 20 minutes (selon ton four), couvre-la avec une feuille de papier d&#8217;aluminium pour \u00e9viter qu&#8217;elle ne brunisse trop.<br>\n<ul class=\"wp-block-list\">\n<li><strong>Astuce pour r\u00e9ussir la cuisson :<\/strong> Place la brioche dans le bas du four et utilise le mode chaleur statique. La chaleur tournante peut avoir deux inconv\u00e9nients : elle peut cuire la surface trop vite et dess\u00e9cher la babka en raison de la ventilation.<\/li>\n<\/ul>\n<\/li>\n<\/ol>\n\n\n\n<h3 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Preparer_le_Sirop\"><\/span>Pr\u00e9parer le Sirop <span class=\"ez-toc-section-end\"><\/span><\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Dans une petite casserole, fais chauffer le sucre et l&#8217;eau ensemble. Laisse mijoter jusqu&#8217;\u00e0 ce que le sucre soit compl\u00e8tement dissous. Badigeonne le sirop sur la babka encore chaude.<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Laisse refroidir la babka \u00e0 temp\u00e9rature ambiante, puis sers.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Le_Secret_dune_Babka_Reussie\"><\/span>Le Secret d\u2019une Babka R\u00e9ussie<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Repos :<\/strong> Pour moi, une brioche doit \u00eatre vraiment moelleuse. Pour y arriver, il est essentiel de suivre la recette \u00e0 la lettre, mais surtout de respecter les temps de pousse de la p\u00e2te. Je te recommande de laisser la p\u00e2te lever pendant 2 \u00e0 2h30 \u00e0 temp\u00e9rature ambiante (environ 25\u00b0C), ou, comme je le sugg\u00e8re, de la laisser reposer toute une nuit au r\u00e9frig\u00e9rateur.<br><\/li>\n\n\n\n<li><strong>Fa\u00e7onnage :<\/strong> Si la p\u00e2te devient trop molle pendant le fa\u00e7onnage, le beurre ramollit et la p\u00e2te se d\u00e9forme plus facilement. Pour un rendu esth\u00e9tique optimal, repose la p\u00e2te au frais pendant la nuit.<br><\/li>\n\n\n\n<li><strong>Filmer la P\u00e2te :<\/strong> Filme bien la p\u00e2te au contact avant de la mettre au r\u00e9frig\u00e9rateur pour \u00e9viter qu\u2019elle ne cro\u00fbte.<br><\/li>\n\n\n\n<li><strong>Refroidir la Garniture :<\/strong> Laisse bien refroidir la garniture avant de l\u2019utiliser pour ne pas r\u00e9chauffer la p\u00e2te.<br><\/li>\n\n\n\n<li><strong>Cuisson :<\/strong> Couvre la brioche \u00e0 mi-cuisson si elle dore trop vite.<br><\/li>\n\n\n\n<li><strong>Activer la Levure :<\/strong> Si tu utilises de la levure d\u00e9shydrat\u00e9e, active-la dans du lait ou de l&#8217;eau ti\u00e8de avant de l\u2019incorporer.<br><\/li>\n\n\n\n<li><strong>G\u00e9rer la Collance :<\/strong> La p\u00e2te \u00e0 brioche peut \u00eatre collante \u00e0 cause du beurre. Ajoute de la farine si n\u00e9cessaire et prolonge le p\u00e9trissage pour que la farine absorbe bien le liquide. Humidifie tes mains pour \u00e9viter que la p\u00e2te colle trop.<br><\/li>\n\n\n\n<li><strong>Astuce pour r\u00e9ussir la cuisson : <\/strong>Place la brioche dans le bas du four et utilise le mode chaleur statique. Pr\u00e9pare-le en faisant bouillir du sucre avec un peu d&#8217;eau, et applique-le sur la babka d\u00e8s qu&#8217;elle est encore chaude.
