La base de ce ramen est un bouillon au beurre de cacahu\u00e8tes, lait de soja et bouillon de poulet. La couleur unique du bouillon provient principalement de la p\u00e2te de s\u00e9same et du lait de soja. Le bouillon a une saveur douce pour que le piquant puisse ressortir. Le tan tan ramen est toujours garni de niku miso saut\u00e9, un porc hach\u00e9 sucr\u00e9 et sal\u00e9, ainsi que de quelques l\u00e9gumes verts.<\/p>\n\n\n\n<p>Bon, je l&#8217;ai r\u00e9adapt\u00e9 \u00e0 ma sauce et selon mes pr\u00e9f\u00e9rences ! Ce plat est une inspiration du tantanmen, avec les ingr\u00e9dients que j&#8217;avais sous la main.<\/p>\n\n\n\n<p>La base du bouillon est faite de beurre de cacahu\u00e8tes, \u00e0 laquelle j&#8217;ai ajout\u00e9 du miso blanc. La viande hach\u00e9e de b\u0153uf est \u00e9pic\u00e9e avec du gochujang (c&#8217;est ce que j&#8217;avais chez moi), mais elle est normalement assaisonn\u00e9e avec du doubanjiang, une p\u00e2te de haricots \u00e9pic\u00e9e. Fouette ensemble la sauce soja, le beurre de cacahu\u00e8tes, le vinaigre de riz, le sirop d&#8217;\u00e9rable, le miso et l&#8217;huile piment\u00e9e jusqu&#8217;\u00e0 obtenir une texture lisse. Mets de c\u00f4t\u00e9.<\/li>\n\n\n\n<li>Dans une casserole, combine le bouillon de poulet et le lait de soja, puis fais chauffer \u00e0 feu doux. Couvre pour garder au chaud. Fais aussi bouillir une grande casserole d&#8217;eau pour les l\u00e9gumes verts et les nouilles.<\/li>\n\n\n\n<li>Chauffe un une po\u00eale \u00e0 feu moyen-vif jusqu&#8217;\u00e0 ce qu&#8217;il commence \u00e0 fumer. Ajoute 1 cuill\u00e8re \u00e0 soupe d&#8217;huile et fais cuire le b\u0153uf hach\u00e9 avec l&#8217;ail et le gingembre \u00e9minc\u00e9 jusqu&#8217;\u00e0 ce qu&#8217;il soit dor\u00e9 et croustillant. Ajoute la p\u00e2te de haricots \u00e9pic\u00e9e et fais cuire pendant encore une minute. \u00c9teins le feu et mets de c\u00f4t\u00e9.<\/li>\n\n\n\n<li>Dans la casserole d&#8217;eau bouillante, ajoute les l\u00e9gumes verts et blanchis pendant 30 secondes \u00e0 1 minute. Retire-les de l&#8217;eau, \u00e9goutte et mets de c\u00f4t\u00e9. Ram\u00e8ne l&#8217;eau \u00e0 \u00e9bullition et ajoute les nouilles, en les cuisant selon les instructions du paquet jusqu&#8217;\u00e0 ce qu&#8217;elles soient juste cuites et encore al dente.<\/li>\n\n\n\n<li>Ajoute la moiti\u00e9 du m\u00e9lange de p\u00e2te de s\u00e9same dans chaque bol, suivi du m\u00e9lange de bouillon\/lait chaud. Remue pour combiner. R\u00e9partis les nouilles cuites entre les deux bols et garnis avec le b\u0153uf cuit, les l\u00e9gumes blanchis et les c\u00e9bettes hach\u00e9es. Si tu aimes \u00e7a encore plus \u00e9pic\u00e9, tu peux ajouter un peu plus d&#8217;huile piment\u00e9e sur le dessus.<\/li>\n\n\n\n<li>Tu peux ajouter des toppings si tu veux : moi, j&#8217;ai ajout\u00e9 des \u0153ufs marin\u00e9s et des champignons. Ajoute 1 cuill\u00e8re \u00e0 soupe d'huile et fais cuire le b\u0153uf hach\u00e9 avec l'ail et le gingembre \u00e9minc\u00e9 jusqu'\u00e0 ce qu'il soit dor\u00e9 et croustillant.
