Voici la recette pour les r\u00e9aliser.<\/p>\n\n\n\n<p>Ces latk\u00e9s au Ras el Hanout sont encore plus savoureux lorsqu&#8217;on les accompagne d&#8217;une sauce au yaourt au safran, d&#8217;huile piment\u00e9e et de chips d&#8217;ail croustillantes. class=\"wp-block-list\">\n<li>Id\u00e9alement, \u00e0 l&#8217;aide de la r\u00e2pe d&#8217;un robot culinaire, ou en utilisant les trous moyens d&#8217;une r\u00e2pe manuelle, r\u00e2pe les pommes de terre. Dans un bol s\u00e9par\u00e9, fais de m\u00eame avec l&#8217;oignon, en \u00e9liminant le jus d&#8217;oignon qui se forme. Transf\u00e8re les l\u00e9gumes r\u00e2p\u00e9s dans un grand bol.<\/li>\n\n\n\n<li>Travaille avec une petite quantit\u00e9 de pommes de terre et d&#8217;oignons \u00e0 la fois, place-les au centre d&#8217;un torchon propre ou d&#8217;un tissu \u00e0 fromage, et presse pour extraire le maximum de liquide dans un bol. R\u00e9p\u00e8te cette op\u00e9ration jusqu&#8217;\u00e0 ce que tous les l\u00e9gumes r\u00e2p\u00e9s soient bien secs.<\/li>\n\n\n\n<li>Prends le bol contenant le jus de pommes de terre et d&#8217;oignons et verse doucement le liquide. Il devrait rester une p\u00e2te de f\u00e9cule de pomme de terre au fond du bol. Garde cette f\u00e9cule de pomme de terre en r\u00e9serve.<\/li>\n\n\n\n<li>Dans un grand bol, m\u00e9lange la f\u00e9cule de pomme de terre r\u00e9serv\u00e9e, les oeufs le sel, ras el hanout, le poivre, ajoute ce m\u00e9lange ainsi que la farine ou la chapelure aux l\u00e9gumes r\u00e2p\u00e9s s\u00e9ch\u00e9s. M\u00e9lange bien, puis forme des galettes de latk\u00e9s. <\/li>\n\n\n\n<li>Dans une grande po\u00eale \u00e0 feu moyen, chauffe environ 1\/2 cm d&#8217;huile jusqu&#8217;\u00e0 ce qu&#8217;elle fr\u00e9misse. Pour tester si l&#8217;huile est suffisamment chaude, prends un peu de p\u00e2te de latke et v\u00e9rifie qu&#8217;elle cr\u00e9pite et commence \u00e0 brunir.<\/li>\n\n\n\n<li>Forme autant de latkes que la po\u00eale peut contenir sans trop les serrer, puis ajoute-les \u00e0 l&#8217;huile. Fais frire jusqu&#8217;\u00e0 ce qu&#8217;ils soient croustillants et dor\u00e9s, environ 2 \u00e0 3 minutes de chaque c\u00f4t\u00e9. Transf\u00e8re-les sur du papier absorbant pour les \u00e9goutter, puis saupoudre-les d&#8217;un peu de sel. R\u00e9p\u00e8te l&#8217;op\u00e9ration avec le reste de la p\u00e2te \u00e0 latkes.<\/li>\n<\/ul>\n\n\n\n<p><strong>Pour la garniture<\/strong>&nbsp;:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>Les chips d\u2019ail<\/strong>\u00a0:\n<ul class=\"wp-block-list\">\n<li>\u00c9pluche les gousses d\u2019ail et coupe-les en fines lamelles.<\/li>\n\n\n\n<li>Fais chauffer un peu d\u2019huile dans une po\u00eale, puis fais frire les lamelles d\u2019ail jusqu\u2019\u00e0 ce qu\u2019elles soient dor\u00e9es et croustillantes. \u00c9goutte-les sur du papier absorbant.<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li><strong>Pr\u00e9pare le chili oil au s\u00e9same<\/strong>\u00a0:\n<ul class=\"wp-block-list\">\n<li>Fais chauffer doucement l\u2019huile d\u2019olive dans une petite casserole.<\/li>\n\n\n\n<li>Ajoute les graines de s\u00e9same, les flocons de piment, la feuille de laurier et le cumin. Laisse infuser 2 minutes sans br\u00fbler les \u00e9pices. Retire du feu et r\u00e9serve.<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li><strong>Pr\u00e9pare l\u2019oignon rouge<\/strong>\u00a0:\n<ul class=\"wp-block-list\">\n<li>Coupe l\u2019oignon rouge en fines rondelles.
