Il est consid\u00e9r\u00e9 comme un fromage sain, souvent pr\u00e9sent sur les tables de petit-d\u00e9jeuner marocaines en raison de sa digestibilit\u00e9 et de sa capacit\u00e9 \u00e0 accompagner divers types de pains marocains. Pendant le mois de Ramadan, il est \u00e9galement d\u00e9gust\u00e9 lors du <em>ftour<\/em> (rupture du je\u00fbne).<\/p>\n\n\n\n<p>Le lait utilis\u00e9 pour pr\u00e9parer le Jben est non pasteuris\u00e9 et coagule gr\u00e2ce \u00e0 une pr\u00e9sure naturelle, issue soit de la s\u00e8ve de figuier, soit de l\u2019estomac d\u2019un jeune chevreau. Apr\u00e8s sa fabrication, l e fromage est g\u00e9n\u00e9ralement press\u00e9 et envelopp\u00e9 dans une feuille de palmier avant d\u2019\u00eatre vendu dans les rues ou les march\u00e9s locaux. Son go\u00fbt est naturel, souvent marqu\u00e9, et il peut \u00eatre consomm\u00e9 sal\u00e9 ou non. Parfois, des herbes y sont ajout\u00e9es pour varier les saveurs. Par exemple, on peut utiliser du lait pasteuris\u00e9 et du lait ferment\u00e9 (<em>lait ribot<\/em>). Il suffit de chauffer le m\u00e9lange doucement, d\u2019ajouter un peu de jus de citron ou de vinaigre pour faire cailler le lait, puis de filtrer le tout avec un tissu propre pour obtenir un fromage frais.<\/p>\n\n\n\n<p>Cette version maison est facile \u00e0 r\u00e9aliser, tout en restant proche de l&#8217;esprit du Jben traditionnel. Vous pouvez l\u2019assaisonner avec une pinc\u00e9e de sel, ou m\u00eame ajouter des herbes fra\u00eeches comme la menthe ou le thym.
