Hybride entre un croissant et un muffin, ils sont garnis de deux d\u00e9licieuses frangipanes : une version amande, pomme et caramel pour les amateurs de douceur gourmande, et une version pistache pour une touche d&#8217;originalit\u00e9.<\/p>\n\n\n\n<p>Pour ces cruffins des rois, j&#8217;ai utilis\u00e9 la Cheats Croissant Dough d&#8217;Edd Kimber, une version simplifi\u00e9e de la p\u00e2te \u00e0 croissant, qui imite les couches feuillet\u00e9es de la version traditionnelle, mais sans le processus complexe de laminage (plier et rouler la p\u00e2te avec du beurre \u00e0 plusieurs reprises). Cette m\u00e9thode est plus rapide et plus accessible, parfaite pour obtenir un effet feuillet\u00e9 sans trop de travail.<\/p>\n\n\n\n<p>J&#8217;ai suivi les conseils de Philippe Conticini en utilisant des amandes enti\u00e8res concass\u00e9es et torr\u00e9fi\u00e9es, m\u00e9lang\u00e9es \u00e0 du beurre et de la cr\u00e8me p\u00e2tissi\u00e8re. L&#8217;ajout des pommes au caramel (j&#8217;ai opt\u00e9 pour un caramel de coco) apporte une touche juste dingue. C\u2019est une combinaison ultra gourmande qui fait toute la diff\u00e9rence, et pour la version pistache, c\u2019est tout aussi irr\u00e9sistible !
