Un plat culte, ancr\u00e9 dans la tradition, et surtout, une bombe de saveurs. Une bouch\u00e9e, et tu comprends pourquoi il est incontournable. Je me suis inspir\u00e9e des saveurs iraniennes, mais avec une petite triche de flemme pour \u00e9viter les brochettes.<\/p>\n\n\n\n<p>La vraie technique du chelow kabab demande un certain savoir-faire : traditionnellement, la viande est fa\u00e7onn\u00e9e autour de longues \u00e9p\u00e9es en m\u00e9tal avant d\u2019\u00eatre grill\u00e9e. Un geste pr\u00e9cis, qui fait partie de l\u2019\u00e2me de ce plat. La l\u00e9gende raconte m\u00eame que ce plat aurait vu le jour au Moyen \u00c2ge, quand des soldats auraient utilis\u00e9 leurs \u00e9p\u00e9es pour cuire la viande sur les flammes d\u2019un feu de camp. Une cuisine n\u00e9e de l\u2019instinct et de la d\u00e9brouille.<\/p>\n\n\n\n<p>Alors oui, normalement, \u00e7a demande un certain savoir-faire\u2026 mais ici, j\u2019ai trouv\u00e9 un moyen d\u2019en retrouver l\u2019essence, sans trop d\u2019effort. b\u0153uf pour les brochettes de kebab iraniennes, le koobideh, on retrouve traditionnellement de l\u2019oignon, du sumac, du safran, du curcuma, du sel et du poivre. Cette version s\u2019inspire de cette palette de saveurs, mais j\u2019y ai ajout\u00e9 ma touche avec d\u2019autres \u00e9pices : oignon et ail en poudre, sumac, menthe s\u00e9ch\u00e9e, paprika fum\u00e9, ainsi que du persil, de l\u2019oignon et de l\u2019ail r\u00e2p\u00e9.<\/p>\n\n\n\n<p>Bien s\u00fbr, tu peux rester fid\u00e8le aux \u00e9pices classiques si tu veux. Elle est ensuite press\u00e9e entre le pouce et l\u2019index pour cr\u00e9er plusieurs empreintes espac\u00e9es. <\/p>\n\n\n\n<p>Pour reproduire cette forme tout en gagnant du temps, je fa\u00e7onne un bloc rectangulaire bien uniforme, que je d\u00e9coupe en cinq boudins.
