Cela fait d\u00e9j\u00e0 10 jours que j&#8217;avais l&#8217;intention de vous la proposer, et ce matin, j&#8217;ai eu cette certitude : c&#8217;est le moment. Avec le rythme effr\u00e9n\u00e9 des derniers jours, je me suis enfin accord\u00e9 un peu de temps pour vous en parler, car cette recette m\u00e9rite vraiment d&#8217;\u00eatre partag\u00e9e.<\/p>\n\n\n\n<p>Et voil\u00e0, aujourd&#8217;hui, sans m\u00eame y penser, je tombe sur la date de Nowrouz, cette f\u00eate persane o\u00f9 l&#8217;Ash Reshteh est un incontournable. Je trouve cette co\u00efncidence tellement belle !<\/p>\n\n\n\n<p>L&#8217;Ash Reshteh est une soupe traditionnelle iranienne, riche en herbes, haricots et nouilles, un v\u00e9ritable r\u00e9confort. Nowrouz, quant \u00e0 lui, est le Nouvel An persan, une p\u00e9riode de renouveau, de partage et de convivialit\u00e9. Elle se compose d\u2019un savoureux m\u00e9lange de haricots, de l\u00e9gumineuses et de nouilles moelleuses, des oignons bien caram\u00e9lis\u00e9s, le tout dans un bouillon \u00e9pais et cr\u00e9meux\u2026 un vrai r\u00e9gal !<\/p>\n\n\n\n<p>Ce qui rend l\u2019Ash Reshteh si onctueuse, c\u2019est un ingr\u00e9dient magique : le Kashk, un lactos\u00e9rum &#8220;Whey&#8221; issu du yaourt ferment\u00e9, qui lui conf\u00e8re une saveur acidul\u00e9e et unique. Vous pouvez le retrouver dans les \u00e9piceries orientales. Pas de panique si vous ne trouvez pas de Kashk : vous pouvez tout \u00e0 fait r\u00e9aliser cette soupe avec quelques substitutions simples: Comme de la cr\u00e8me fra\u00eeche ou du yaourt grec. <\/p>\n\n\n\n<p>Pour ma part, j\u2019ai exp\u00e9riment\u00e9 une fois dans le Kashk Bademjan un caviar d\u2019aubergine r\u00e9alis\u00e9 avec du Kashk \u2013 son go\u00fbt \u00e9tait si intense que j&#8217;ai eu peur de retenter, haha ! Ne vous laissez cependant pas d\u00e9courager par cette multitude, car presque tout est facilement accessible et \u00e9conomique.<\/p>\n\n\n\n<p>Le go\u00fbt est vraiment unique, quelque chose que je n&#8217;avais jamais exp\u00e9riment\u00e9 auparavant ; c&#8217;est incroyable, surtout avec la menthe s\u00e9ch\u00e9e et les oignons caram\u00e9lis\u00e9s.<\/p>\n\n\n\n<p>Quant aux nouilles, il s&#8217;agit de vari\u00e9t\u00e9s sp\u00e9cifiques appel\u00e9es Reshteh.
