La chermoula, avec son m\u00e9lange d\u2019\u00e9pices et d\u2019herbes, apporte une profondeur de go\u00fbt unique qui se marie parfaitement aux olives, une star incontournable de la cuisine marocaine. Ce mariage de saveurs et de textures est un v\u00e9ritable voyage culinaire, tout en \u00e9tant incroyablement simple \u00e0 r\u00e9aliser. Avec une seule lev\u00e9e, il est pr\u00eat en environ 2 heures, une prouesse pour un pain aussi savoureux !<\/p>\n\n\n\n<p>Sa mie, \u00e0 la fois tendre et moelleuse, contraste harmonieusement avec sa cro\u00fbte dor\u00e9e et croustillante. L\u2019huile d\u2019olive et la g\u00e9n\u00e9rosit\u00e9 des olives, l&#8217;ail, le citron confit dans la p\u00e2te lui conf\u00e8rent une saveur exceptionnelle, rendant ce pain irr\u00e9sistible, que l\u2019on suive un r\u00e9gime sans gluten ou non. On les m\u00e9lange avec de la coriandre fra\u00eeche, du citron confit, de l\u2019ail, des \u00e9pices chaudes, un peu de harissa et une bonne huile d\u2019olive. Ses recettes sont toujours ultra pr\u00e9cises et bien pens\u00e9es, et celle-ci ne fait pas exception. J\u2019ai suivi tous ses conseils \u00e0 la lettre, et depuis maintenant quatre ans, ce pain est devenu un classique chez moi. Je l\u2019adapte \u00e0 mes go\u00fbts, \u00e0 ma mani\u00e8re de manger, mais la base reste toujours la m\u00eame : une mie moelleuse, une cro\u00fbte croustillante, et une tenue parfaite. Privil\u00e9gie le psyllium blond entier. Si tu n\u2019as que du psyllium en poudre, r\u00e9duis la quantit\u00e9 \u00e0 85 % (il absorbe plus d\u2019eau).<\/li>\n\n\n\n<li>V\u00e9rifie bien la <strong>temp\u00e9rature de ton four <\/strong>avec un thermom\u00e8tre. Un four mal calibr\u00e9 peut changer tout le r\u00e9sultat.<\/li>\n\n\n\n<li>Pour une belle cro\u00fbte et une bonne lev\u00e9e, ajoute <strong>quelques gla\u00e7ons autour du pain<\/strong> (dans ta cocotte ou sur la plaque) : \u00e7a cr\u00e9e de la vapeur, qui aide le pain \u00e0 mieux gonfler avant que la cro\u00fbte ne fige.<\/li>\n\n\n\n<li>Pas de cocotte ? Une plaque bien chaude fonctionne aussi. La cocotte garde mieux la chaleur, mais le pain reste top m\u00eame sans.<\/li>\n\n\n\n<li>Et surtout : p\u00e8se ton pain \u00e0 la sortie du four ! Un bon pain bien cuit perd environ 14 % de son poids \u00e0 la cuisson. Pour celui-ci, vise un poids final autour de 790 g.<\/li>\n\n\n\n<li>Dernier conseil :<strong> laisse-le refroidir compl\u00e8tement avant de le couper<\/strong>. (\u26a0\ufe0f Toutes les substitutions doivent \u00eatre faites <strong>en poids<\/strong>, pas en volume.)<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Psyllium blond<\/strong> : C\u2019est <strong>indispensable<\/strong> pour la structure du pain. Il n\u2019y a pas d\u2019ingr\u00e9dient \u00e9quivalent pour le remplacer. Si tu utilises du psyllium en poudre au lieu du psyllium entier, r\u00e9duis la quantit\u00e9 de <strong>15 %<\/strong> (donc 85 % du poids indiqu\u00e9 dans la recette). Tu n\u2019as pas besoin d\u2019ajuster la quantit\u00e9 d\u2019eau pour le gel.<\/li>\n\n\n\n<li><strong>Levure instantan\u00e9e<\/strong> : Tu peux la remplacer par de la <strong>levure s\u00e8che active<\/strong>, mais il faudra l\u2019activer au pr\u00e9alable. Utilise l\u2019eau ti\u00e8de pr\u00e9vue pour le m\u00e9lange avec le psyllium, le vinaigre et l\u2019huile d\u2019olive pour dissoudre la levure.
