au cumin, souvent avec un bon filet d\u2019huile d\u2019olive. C\u2019est un plat du quotidien, populaire, abordable, mais charg\u00e9 de m\u00e9moire et d\u2019affection. Il s\u2019impose dans la semaine, toujours. J\u2019dis \u00e7a en rigolant, mais c\u2019est de l\u00e0 que l\u2019inspiration est partie.<\/p>\n\n\n\n<p>Le salmorejo, c\u2019est une soupe froide andalouse, \u00e0 base de tomates bien m\u00fbres et de pain mix\u00e9, un peu plus onctueuse que le gazpacho, plus concentr\u00e9e aussi. Moi, je l\u2019ai twist\u00e9e avec des ingr\u00e9dients de mon placard \u00e0 moi : <strong>tomates cerise<\/strong> pour une douceur naturelle, <strong>cumin<\/strong>, <strong>graines de coriandre<\/strong>, un peu de <strong>piment toast\u00e9<\/strong>, <strong>sel<\/strong>, <strong>poivre<\/strong>, beaucoup d\u2019<strong>huile d\u2019olive<\/strong>. Et du <strong>pain rassis<\/strong> bien tremp\u00e9, pour la texture.<\/p>\n\n\n\n<p>Une soupe froide, dense, parfum\u00e9e, fra\u00eeche mais profond\u00e9ment famili\u00e8re. Et pour y apporter du croquant, au lieu des classiques \u0153ufs durs et jambon espagnols : <strong>des haricots blancs croustillants<\/strong>. C\u2019est ceux que je pr\u00e9f\u00e8re, et ils supportent tr\u00e8s bien la cuisson sans s\u2019\u00e9craser.<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>Rincez<\/strong> bien vos haricots en bo\u00eete ou d\u00e9j\u00e0 cuits.<\/li>\n\n\n\n<li><strong>\u00c9gouttez-les<\/strong> et surtout <strong>essuyez-les soigneusement<\/strong> avec un torchon propre ou du papier absorbant. Il faut qu\u2019ils soient bien secs.<\/li>\n\n\n\n<li><strong>\u00c9talez-les<\/strong> sur une plaque ou une po\u00eale avec un bon filet d\u2019<strong>huile d\u2019olive<\/strong> et un peu de <strong>sel<\/strong>.<\/li>\n\n\n\n<li><strong>Faites-les griller<\/strong> au four (200\u00b0C, environ 25-30 minutes en remuant \u00e0 mi-cuisson) ou \u00e0 la po\u00eale \u00e0 feu moyen-vif jusqu\u2019\u00e0 ce qu\u2019ils soient dor\u00e9s et croustillants.<\/li>\n\n\n\n<li>Une fois hors du feu, <strong>assaisonnez-les \u00e0 chaud<\/strong> : pour moi, c\u2019\u00e9tait <strong>paprika<\/strong>, <strong>ail en poudre<\/strong>, <strong>sel<\/strong> et <strong>poivre<\/strong>.
